    Happy Preakness Day!!!!!! (GO Firing Line) I wouldn't be sad to see AP win so we could root for a triple crown....... (sorry..I'll stop with the horse talk now ) In between storms yesterday I went out and picked some more spinach and collard greens. The greens are as tender as the spinach right now so I used both in a lasagna. Started with salad made from assorted lettuce from the garden and a couple of green onions. Then we moved on to the lasagna. I need to find a pan that is deeper, but around the same width. I always have an overflow problem.

    I needed to use some veggies so I made a crustless ham quiche with spinach (garden), asparagus (garden), mushrooms, onions and peppers. Fried taters, spinach and onions from the garden to go with.

  5. Lol thank you--I know....57, such an odd one to land on. Maybe it will be lucky No...I love fresh green beans but I've never gotten them to grow. I'm thrilled that my peas look halfway decent. I've never been able to grow them either. Maybe next year.
  6. I planted the last of my garden yesterday. I have a final tally of what I planted. I think I got a little carried away .......we'll see if we have a banner year. 7 cucumbers 8 basil 23 okra 4 rows assorted lettuce 20 peppers-thai, jalapeño, bell, banana 4 rows peas 5 cilantro 1 tarragon 2 dill many many red and white onions 7 eggplant 3 rows spinach 57 tomatoes 5 cherry tomatoes 7 rows silver queen sweet corn 11 squash 4 watermelon 2 cantaloupe 6 pumpkin I took a ton of pictures yesterday but I won't bore you with them...maybe when things get a bit bigger. For now, just a couple. We put a bench and a table on the south side of the garden so we can sit there with wine and watch it grow. That's Chum taking a break underneath. View from the bench. Excuse my dirty feet....just got done working.
  7. You've done so much for them, they'll be ok doughnut-ing for a day. I'm still dreaming of your snickerdoodles. I've been married for 15 years and been with my husband for over 20. All this time I had it in my head that he hated snicker doodles. I mentioned yours to him and he said "Oh I haven't had those forever, you should make some". I have no idea where I got the notion that he didn't like them.
  8. I concur on the cooking....it cooks faster than you think so be ready. I wouldn't brine it. I brine my chicken, but quail have such a great flavor that I like to taste just that. We usually do just a light poultry seasoning rub on them. I hope you post pictures

    Thank you so much! I didn't know they were edible. I learn something new every day! I have several bushes. My mom used to work at a peony farm here years and years ago so I learned a bit about planting and maintenance from her (I used to go with her...I was like 5???? They let me run the string machine that tied up the bouquets once in a while--made me feel cool lol) I definitely will be googling to find out more about eating them.

    Well, you guys have certainly been busy cooking up some lovely stuff! Everything looks so good. LiamsAunt--Your monkfish tacos.....yummmmmmm. Ninagluck--Great looking asparagus. I'm going to google and see if I can find some strawberry seed oil. Sounds interesting! ***side note: A lot of my asparagus is big, but it's actually more tender than the skinny ones most of the time. Paul--I want a huge plate of the braciola please. Kay--I'm jealous of your caprice. I have caprice envy lol. Harrysnapperorgans--I'll bet your wife really enjoyed that ravioli. I love the hearts! Liuzhou--I'm so hungry for stir-fry. I hope you got moved into your new place ok. My mom was here over the weekend. We had the best time! She arrived Friday evening. She loves pasta and fresh veggies so I tried to squeeze in all of her favorites. I figured she'd be hungry after such a long drive so I had deviled eggs and marinated asparagus from the garden ready. Later we had spaghetti and venison meatballs. The sauce was some that I made last summer and froze. Same with the meatballs. I made some french bread to go with. And some steamed asparagus. Saturday we hurried outside to peruse the garden and look around. My plan was to spend a ton of time outdoors just sitting....drinking wine and mimosas and talking. However, mother nature decided to make it pour rain the whole time. Anyway, she did get to see everything and pick some goodies. Here's our haul: Spinach, onions, some asparagus is hiding under there and some peonies (our most favorite flower in the world) That night I made an alfredo with shrimp and scallops over a bed of vinegar sautéed spinach. The next day was Mother's Day. I can't remember when I last spent it with my mother. Probably at 17-18 years......so I wanted to make it special. She had never had good caviar before so I ordered three different kinds from Marky's along with blinis and creme fresh. I chopped up some boiled egg, too. We had the best time tasting and deciding which we liked the best. In the end we decided we liked simply scooping up the caviar and eating it straight from the spoon. No garnishment needed. Here is the table: Bagels, marinated asparagus, whipped cream cheese, whipped scallion cream cheese, egg, capers, creme fresh, caviar, spanish blue cheese, sharp cheddar cheese, some kind of red wine soaked cheese (super good), fresh strawberries, olives, prosciutto, blini, smoked salmon. Phew! Oh and of course champagne. We munched and talked for hours! Later on Sunday evening I made a couple of pizzas.....I forgot to take pictures, but ya'll have seen my pizza before Last night I made some beer batter and fried some asparagus, mushrooms and a wiper that my husband caught from the lake on Sunday.

    I got to see and film my very first tornado Wednesday evening. I'm still SO excited. It was about 2 miles from my house. I filmed it from inside my truck next to my mailbox. Supposed to be an active couple of days so who knows what else I might get to see. My mom is coming today!!!!!! I'm beside myself with excitement. We had leftovers last night: Fried chicken, taters and swiss chard

    Liuzhou---UGH moving is awful. Hang in there, it will be over soon. And, your new place will be a lot more organized than my house is--if that's any comfort to you I have some cauliflower languishing in the fridge. Your stir fry has inspired me. I got locked outta Egullet yesterday I missed you guys My mom is coming to visit me for a couple of days. I haven't seen her since two Christmas's ago. So, I'm scurrying around trying to spruce the place up and planning some good food. She'll be here on Mother's Day so mimosas will definitely be in the mix Oh and Happy Cinco de Mayo!!     Congratulations on the retirement!!!! Patrick, thank you so much. You've made my day Kay, you just can't beat a poached egg over fresh asparagus. And, trust me, I've been gravy challenged for YEARS. If I can do it, you can do it! Happy Kentucky Derby Day, everyone!!!!! I love this day more than any day of the whole year. Steak quesadillas the other night Turkey sandwiches with onion rings and the best experiment I've done in a long time: fried asparagus spears. O M G try this guys. REALLY good.
  19. Oh, you've brought back some good memories for me. I used to go to Tablerock Lake with my best friend and her family in the summertime. We would always go into Eureka Springs and shop. I learned how to water ski there.

  21. Hi guys I love reading about all of your different gardens and techniques. I've been a busy girl. I'm trying to weed every day so that it doesn't become an overwhelming job. 26 tomato plants are in. I'm waiting for 15 more to get big enough to transfer. I have 5 cherry tomato plants in, too. The okra came up! I have a feeling that I planted too many of those...... The only things that haven't made an appearance yet are the corn and the brussels sprouts.
