  2. The customer has the right to ask for substitutions, the restaurant has the right to decline. life goes on. If you dont like peaches, dont order peche melba.
  3. Take Peach. Slice. Add raspberries. Eat peach and raspberries. Alfredo: pasta, cream, cheese, butter.
  4. Brats are brats, at any age. The most annoying meal I had was dominated by a blow-by-blow description of a bad blind date, broadcast from the neighboring table. The offenders were at least in their mid-30s. No one was with them to remind them to use their inside voice, or to take them out til they calmed down. Sigh. That said, kids can be holy terrors, especially at holiday time or in vacation locations when all the rhythms of life are off. It all works better when there is a careful selection of day and time, and a good run afterward, to work off all the 'sitting still' tension.
  5. They could perhaps put a small pepper grinder on each table, instead of walking around as if it were still worth its weight in gold.
  6. I read this to mean that you dont like using packaged foods, but have to for this recipe. I was some impressed! My dad's cheesecake recipe is this same one, and I agree, it has to be Philly fullfat creamcheese. I checked ingredient labels on other brands once upon a time, and there was a differene that seemed to account for the lesser result, but I dont remember what it was. Yet I can use 'light' sour cream for the topping, and its fine. I used to have the recipe memorized, I would make it so often.

  8. Its accepting copy/paste from Word? Good to know. Previous experience w eGullet made me avoid Word because it would spaz out. I would use notepad back then instead, but that's no more fun than the wikieditor, so was writing directly for this. Typos are not the end of the world. The next opinionated so&so (like me, for instance) will fix them for you. That's one of the strengths of the wiki-beast.
  9. Yup, the folks who use a straw for ice tea do it so they wont have to taste all that awful ice tea, same thing for all those milkshake drinkers in the world, at least by that logic. Drink thru a straw. Does it skip your mouth? Really? It just skips the front teeth - you know, the ones that show coffee stains. And if you've paid to have your teeth bleached, you would care about these things.

    They sell a special funnel that will do this for you, without dirtying the blender. eGullet had a grand good time a few years, trashtalking about it.
  11. Double the space between fridge and stove, so I could unload all needed ingredients onto it. Under cabinet lighting. Raise the cabinets 4", make then 2" deeper, and one shelf higher. Make entire kitchen 18" wider so that two people who are not in love can still work in it together.
  12. I did a bit of expanding the Meat article, but swapping between editors got it eaten up before I hit Save. I'll go look at it again this week and see if the stubby article has been made betteh by someone (fingers crossed the answer is Yes!) Yup, them little red links are addictive. Only thing stronger is Kettle Black Pepper and Salt potato chips. Is there an article on potato chips yet? Must go see....
  13. rubberbands, kitchen twine, matches, empty recipe cards... Every kitchen needs a place for those, and its so nice looking!
  14. Silverware goes handle up so it doesnt get dirty when being unloaded. Plates go however they best fit, depending on the machine, and what we've been using. Top rack basket is excellent for chopsticks and the like (no lacquer ones tho). Always mop bottoms of mugs etc w tea towel before unloading. Can fit in two frying pans on the bottom. Bowls have their own place in the top rack, but if we have to, they wash fine in the bottom too. I too will only rearrange the dishwasher after you have left, and only if it will completely eliminate the need to do handwash. I'd rather turn the thing on with you still there, in the offchance you'll still be around to help unload too. editted to clarify, because the water puddles on the bottoms of the mugs.

  17. When you do, would you please photograph the steps of prepping the dough to fill, filling it, then pleating it shut? Did you flatten the dough into a circle, then just lift up like a purse and pinch?

  19. San Diego area folks who want a meat grinder - check out this listing on www.sdfreecycle.com 100417 offered - meat grinder - carmel valley I have an old school hand meat grinder. It is made of metal, it clamps to the counter and has 3 "blades" for different courseness of cuts. it is clean, .....
  20. Hot Pot was fun. Stock was made from scratch w pig neckbones, daikon, and tomatoes. We're heathens - we picked the meat off the bones and ate it. Everyone got a kick from choosing their own bits, adding them to cook, then fishing them out. Our guest bought something called Satay Sauce which she said was mandatory for hotpot. I couldnt figure out a single ingredient in it, from tasting. I'll post a photo of the jar if I get the energy. Each of us doctored the sauce to taste using soy sauce, scallions, and chopped garlic. The daikon chunks and the cuttlefish dumplings were the most popular. Chicken slices and cabbage also disappeared with great speed. And then, because its that time of year too, we had Girl Scout cookies for dessert. Thanks for the hints re mess. We covered the table w a towel. It made the drips irrelevant.
  21. pasta puttanesca ala some miami-area (florida) publication, circa 1991-92 Probably the sunday magazine supplement in the Herald, but not sure. It was our favorite puttanesca recipe, and somehow it didnt make the trip west.
  22. Pitting plums for pie. Pinching dumplings. And that intense rush of getting it all going and finishing it all at the right time, tho that zen requires there to be no child in the house.
  23. Mom used to make the shrimp bisque fish. TollHouse cookies are a staple. I havent found a better chocolate chip cookie recipe. Liptons dip is a regular staple. Velveeta dip is known as "comfort food" aka "queso" at our house. Always wanted to try that ritz cracker pie. v. gautam, the paean to the US brought tears to my eyes. Well written, and quite the food for thought.
  24. Wipe it down after every meal, same as the counters. Both done right after washing any dishes that dont fit in the dishwasher (knives).
