  1. could you have poached the steaks in a flavorful broth then used them to make either a salad or pasta sauce? When I grew up we used whatever fish was leftover to make our fish salad ...... just a thought for the future.

  4. Pork chops sauteed quickly then finished in the oven with a sweet and sour sauce made with some hosin, garlic, scallions, soy sauce, honey, rice wine vinegar and mirin. Served with a romaine salad and some 3 cheese scalloped potatoes.

  9. OH MY GOODNESSSSSSS we are only in Chi town for one night .....and John is there for a concert then we are gone. Thank you so much for all of the suggestions. Had seen Big Jones mentioned somewhere........
  10. Thank you IowaDee....we counted migrating hawks for DODPIF, Picatinny Arsenal and Hawkcount for 20 years. We still help count and maintain a bluebird trail on post and are taking a breather before we do something else. Can't wait to get back into the center of the country....

  12. In situ I'm afraid..... they are now endangered at state and national level. I have found many hard core birders have no sense of humor when it comes to hunting, eating or whatever . Actually John did suggest we make a joke about this.
  13. We are staying in Chicago proper as the hubs is going to a concert in the city ...I'm leaving the driving to him so not sure HOW we are getting in there. Great description, Alex, as to what I would like to find.

Johnnybird and I are heading out most of the month of April from our place here in NW NJ to Chicago then on to Nebraska and possibly down to Oklahoma looking for greater and lesser prairie chickens. We are going to be following the Lincoln Highway(Route 30) as much as possible. So far we are planning to go to Taylor's Maid-rite in Marshaltown, IA for a loosemeat sandwich(which my husband likened to looking like something from the cat threw up) and Nana's House in Chicago for Greek spaghetti. Anyone have any experience with anyplace we shouldn't miss?

So earlier did a chicken soup with more noodles than I like for Johnnybird and then a vegetarian soup for me with red lentils,shallot, leek, lentil and some other veg that I pulled together from several different recipes. Today it was a minestrone with some nice veg, white beans and dinosaur kale. I meant to do split pea but A) didn't have split peas and B) didn't have a ham bone. PITA since no one I am married and/or related to the person I am married to likes ham so I no longer have access to ham bones....and there really is no substitute for me.
  16. Last night was pizza with black olives, minced red pepper and some sauce. i put a few dried herbs(oregano, basil and parsley) in the crust flour. For me ... some 3 cheese mix. Tonight will be bison burgers on toasted English muffins. Johnnybird has requested a thin layer of aged cheddar, sweet relish, mixed greens and a bit of ketchup. I want well done bacon, a thin layer of cheddar, tomato and the mixed greens with a bit of Cain's mayo. Mr. Ron's coleslaw for me and potato salad for John I made with hard boiled eggs, minced shallot and the dressing of Cain's and an Italian vinaigrette I made. With the extra bison made a small smooch that John can eat on for breakfast or lunch this weekend. Just pulled half a capon from Quattro's in Pleasant Valley NY. Sunday I plan on roasting it with mixed root veg and herbs. The asparagus seems to look OK and at a reasonable price so maybe that to go with the bird. Will be able to make stock and then soup for next week.
  17. Total white trash dinner for me tonight.... Idahoan boxed scalloped potatoes with extra Cabot cheese, some minced potatoes, minced shallots, ham, frozen peas and white pepper. Cooked on top of the stove then finished in the oven with crushed Lay's bacon mac and cheese potato chips.
  18. Last night was leftovers of whole wheat spaetzle, red cabbage with grape jelly and apple and sauerbraten. Just finishing up a mish mash red lentil soup from two of eG's Pam Reiss' Soup book. Also have Anna Thomas' but these hit me for what I actually have right now.... Leek, onion, garlic, carrots, bay leaf, red lentils, some nice canned tomatoes and - not in the book and no longer pareve or maybe even kosher - a turkey Italian sausage. A bundle of fresh herbs and a bit of salt. For Johnnybird's liking I will take the casing off of the sausage and discard it. Also thinking of finishing with a tiny drizzle of honey(cranberry or broadbean) or some balsamic. A loaf of rustic bread and a simple romaine salad to go with it.
  19. roasted two chicken breasts for sandwiches for Johnnybird as he is off to NYC for another concert(3rd in 1 week). tried a new take on an old recipe ... sun dried tomatoes and ground turkey meatballs. baked them and then served in a marinara sauce with some pasta. STILL can't taste or or smell anything.
  20. hey....some of us are actually allergic/sensitive to celery....... and melons ....and chamomile .... and other things especially at certain times of the year oops ... didn't read all the way to the end but ....pardon me
  21. Just yourself.... they are coming to see you. Maybe something to drink since they have probably traveled and eaten breakfast then they are going out to lunch. I know I would appreciate an Arnie Palmer or water or iced tea. will see you in about 8 months........

  24. just finishing this that I borrowed through my local library and InterLibrary Loan (ILL). Lindacakes will look through my notebooks for some of the culinary history books I liked (so speaks the reference librarian).
