  1. I am really starting to think this is an East/West coast thing at least in the US.... There are probabley thousands of people in NY that understand what "Lox" is and what "Nova" is and what cold "smoked salmon" is. They have probabley never seen chunks of hot smoked "alaskan" or West coast salmon. While some Seattle native who has a beautiful hot smoker rig in their yard has never had a bagel with a schmear. Maybe I should throw some salmon on with the ribs....hmmmm tracey
  2. Since I have to go to my sister in laws very soon....I just thought I would bump this up in preparation tracey
  3. I steam all my veggies...ok brocolli in a big pyrex measuring cup in the microwave. Tuck them in floret up and run water over them, then dump the water and cover with a saucer. Nuke for about 2 min. Tonight I then tossed them in a fry pan with garlic, butter, sesame oil and sesame seeds. tracey

    Pan Sauces

    First try it without the non stick pan so you get good crusty bits on the bottom. other liquids.... dry vermouth brandy cream orange or apple juice balsamic vin apple cider vin mix ins... the shallots onion mushrooms cracked pepper fruit such as pansear pork chops...remove add onions and apples deglaze with wine, juice, or apple cider vin pork chops back in to finish tracey

Randi you may be able to go with seasonings like Marigene's recipe but turn it inot more of a Shake n Bake kind of thing using toasted bread crumbs and rubbing all the coating ingrediants with some oil to make an oven fried coating personally shake n bake is one of my dirty secrets there is always BBQ sauce baked also tracey
  6. Cold smoked is the stuff some people call Lox or just Smoked Salmon. On the East Coast I think you would have to identify Hot Smoked as a different product Just saying smoked salmon around here would be the paper thin cold smoked salmon for a bagel. tracey

  10. Our local joint is Rt 23 Buffet....on Rt 23 Wayne They have the oyster and sushi - roast duck prime rib and korean style bbq beef ribs among others at the grill. All the usual suspects and Snow Crab Last week they had this shrimp and scallion dish that was sooo good little shrimp, scallion and sliced yellow onion almost braised soft in butter with a heat that snuck right up on ya I forget how much dinner is there. tracey

The lack of pasta in a pasta item really throws me with th eStouffers Mac n Cheese...isnt the cheese sauce the expensive part? shouldnt there be enough pasta in there that you dont have a puddle of sauce left???? My freezer has Mrs T's Perogies Green Giant Shoepeg white corn in butter sauce Store brand Latkes....uh onion flavored tater tots and a pie crust for emergency quiche dinners can have Ravioli, Stuffed shells or Manicotti from BJ's tracey

  13. Aaahh you missed my favorite spot, probabley in my top 10 meals ever a little smokey cafe called Ari i Oggi just off Laugavegur heading up towards the church. Mmmm lobster soup, fresh warm bread and butter, and choclate crepes piled with real whipped cream tracey

    Fresh Kielbasa

    I get around the sauerkraut thing by using heaps of sauteed onions and pickled red cabbage... not nearly as funky as sauerkraut actually I make the onions, take mine out then add peppers because my hubby gets Italian sausage and I get keilbasa tracey
  16. Did you get the meat somewhere new? some places are pre-brining their pork.... it was pretty breezy in NJ yesterday how about PA? may have affected the smoke.... be carefull when you turn the grill back on I set one on fire from all the melted pork fat tracey

  20. the last "really fresh fish" that I had was caught in the lake seen in my avatar in the same season ...dead of winter Our neighborhood was out ice fishing, ice skating, and rampaging with quads. Mid afternoon we decided to have some lunch...the girls went shopping and the guys pulled in their fish and cleaned them. Grills were carried from decks down onto the ice and we started cooking up burgers and bass, both damn tasty and a fun day tracey

  23. The process is called standard breading and its...well the standard. If you really pat the flour off the egg should stick but I dont use the flour, so shoot me tracey

  25. If I never had to touch a dish towel again it would be perfect. I think I have 3 in the house and maybe a Christmas decorative one (the others have kitties on them). They are often damp and I dont know how they got that way, I hope no one wiped the counter or anything I might eat off, because I may have wiped my greasy hands on it....see too much maybe, could be yucky or damp or greasy or been near dog hair. Yes I am a paper towel addict no mitts just flat pot holders tracey
