Since I am making a roast chicken with sausage stuffing etc tonight.... does anyone ever do mini Thanksgiving dinners with turkey breast or roasted chicken 1/4s? tracey

Now I dont mean taking half of a Pepperage Farms cake and calling it a serving, although I have in the past. What really got me thinking was a package of frozen ravioli (large round) the nutrition info panel said that 4 was a serving. Yeah maybe if you are doing a multi course Italian dinner with a Primi Secondi Intermezzo and Dessert maybe I could stop at 4 ravioli. We just had ravioli and salad I ate 10 of them. Have they really lowered "serving size" that much to make food look healthier or am I just a pig? tracey

That is indeed a nice looking lasagna. I was trying to describe to my husband this soup I used to make when I worked in a deli 20 years ago. We called it "country sausage minestrone". It contained leftover sausage and peppers chopped up leftover lasagna or baked ziti chopped up chile with beans and canned chicken soup. It was damn tasty and sold well I think we actually "upcharged" it because it was so rich and heavy. sad but true tracey

Controversy over the invention of the hamburger
rooftop1000 replied to a topic in Food Traditions & Culture
From what I know the Hamburg steak and sausages (Franks) weren't served on bread until these "invention" dates. In Germany many sausages are still served in a waxed paper or on a plate rather than a roll. tracey -
When I was a kid we lived with my grandparents, I used to ask my grandmother to please cook like "everyone" else and stop making everything with olive oil. The only time she used vegetable oil (Mazola Corn Oil) was for pan frying breaded chicken cutlets. Now the only thing I dont cook in Olive oil is chicken cutlets and Chinese food....so shoot me. tracey

Just a quick little after work dinner....that required 3 trips to the poultry market waiting for my politically incorrect ingrediants Not this guy though just an innocent chicken its the first course I made 3 trips to the market for after rounding up some Demi, cherry preserves, and sherry vin I was ready to sear off a few slices of this... and swoon over a plate of like this Huson Valley Foie with a black cherry sauce followed by plain old roast chicken with mashed potatoes and peas. The meal I missed in Paris Oh yeah dont cook foie gras at home if you have no kitchen exhaust fan tracey

All the good mommies in NJ had "tupperware" cupcake carriers too - otherwise you had to bring them to school in a Macy's shirt box.... Whichever market is across from the Beacon Theatre had really grat cupcakes a few years ago...topped with at least an inch of white choclate ganache tracey

Not planning much for this year except I want Oysters! As for your tuna may I suggest ...mix eaqual parts honey and soy - roll the blocks of tuna in this and then white sesame seeds - sear in a very hot pan on all sides then let rest and serve over bitter greens with a dressing similar to the marinade...not as sweet though tracey

Just for a goof I sometimes take lumps of really soft sourdough and make "English Muffins". Usually its when I cant wait for that last rise, bake, and cool time. I just drop the rounds onto a nonstick pan and cook on both sides. Fun tasty and instant...well have to go through the first rise but....they cook really fast tracey
