  3. I made a three cheese mac and cheese with a 6 hour smoked keilbasa this weekend.. I used this pasta and it was one of my favorite pastas to use.. The ridges really picked up that sauce..

  5. NY Times Rating System goes like this (at least it is in Jersey's NYT reviews): poor, fair, good, very good, excellent, and extraordinary. Maybe poor = 0 stars Fair = .5 star Good= 1 star Very Good = 2 stars Excellent = 3 stars Extraordinary= 4 stars Too many selections!! It's very iffy. In Jersey, there is only one "extraordinary" restaurant and that is Ryland Inn. It's expensive, and it sucks. I'm not sure, but I would bet Thomas Henklemen's place in Greenwich is also "extraordinary", according to my mom and her boyfriend when they visited there last year. NYC's Restaurant Reviews tell you the bottom line in stars, which is better! ← I have been to the Ryland Inn on several occasions and found it fantastic.. Most recently for a wedding.. What do you base your "it sucks" rating on? What did you get there..
  6. For a grill cheese you certainly want Melting to occur.. For a hot dog i look for the snap when I bite it.. So maybe Snap.. It would be keeping with your one word title too. Or Snappy Dogs, or Snappy's.. or Frank's Redhots.

  8. Finally made it to Verdura last night. Drove up right from the city, stopped by the house to put the turkey in the brine, and was happily seated by 830.. The place had a few diners, but was empty for the most part.. We were really excited after viewing the menu, they are about two weeks into their Spring Menu. Lots of interesting local produce and cheeses on the primi. We started with a local grilled asparagus served with a truffle poached egg and hollandaise sauce. Wow! The asparagus, just in season, was cooked perfectly,. had a smokey bacon essense which went remarkable well with the egg and hollandaise. It was great to clean the plate with the fresh made ciabatta bread.. Our second appetizer was a ricotta and swiss chard Malfatti. Its not often I see Malfatti being made in Italian Kitchens in NYC, I wasnt expecting to see it being made in the Berkshires.. But it was fabulous, it was firm and airy and went really well with the light buttery sauce.. Fantastic. Next we decided on trying a pizza. It was a local mushroom pizza with chevre,onioins and tomato sauce.. This was the least impressive dish.. The pizza was made too thin, and the flavors were muted due to over saucing. I wouldnt say it was terrible, nor did i hate it.. It just seemed inconsistent with the quality of the other dishes. Or even the pizza I had during my last visit. For an Secondi we shared a grilled whole fish. The name of the fish escapes me, but it was a new fish for me.. Somewhere along the lines of a Branzino. It was a beautiful white fish that was firm and intensely buttery. Extremely boney, but well worth it. It was accompanied by a light delgaced vinegar sauce of olives, greens, and bread croutons. The addition of the bread was something i had not seen before, but it worked really well adding another texture and soaking up the flavor. For dessert we had a flourless cake in a port reduction with whipped cream.. Flourless cakes arent too exciting to me, but this was as good as any I have ever had. It was undercooked, making it a little raw and a lot more dense. It worked really well, and the local cream was fabulous. Subtle vanilla and not too much sugar. It was also nice to see that they had Aqua De Cedro.. A rare grappa to be found anywhere, this too was a pleasant surprise.. If this place was in NYC i would be a regular.. What a great find.
  9. My girlfriend is cuban and we use her grandmothers recipe. The cuban version as does most cuban desserts has a mernigue as icing.. Mexican uses a cream..

  11. Too bad about the spicy.. I was in the hospital a couple of years ago with legionaires disease and my mother brought me thai food every other day.
  12. Yeh.. I am not positive. And in all honesty the girl i guess didnt know what the heck i was getting at the check out counter cause i think she charged me half the 28 dollars.. I obviously should have said something but time constraints alone i didnt want to go through the process of educating the girl.
  13. Well I drove by Santillo's yesterday but it is unfortunately closed on Mondays and Tuesdays.. The strange thing about this place is its location.. It is in the middle of a residential area.. The place looks like its someone's home.. There is really nothing seperating it from any of the other houses lined up side by side on that street. I also wonder if it has subs? Veal or chicken cutlet or cold .. Or is it strictly pizza.
  14. The morels were 48 bucks a pound? Thats a lot isnt it? I have recently bought fresh morels at Whole Foods in Time Warner and thought they were 28 bucks..
  15. The only thing she sent in was the 4 to 1 ratio.. It seems that this recipe is just a dud..
  16. So last night i made the rice pudding.. I used a 4 to one ratio milk to rice and the rest of the recipe the same.. It came out good while it was hot, but when i let it cool, the thing turned into a rock.. I could really turn these suckers into rice truffles.. Has this recipe been worked out yet?
  17. Made the pizza dough.. It came out really well.. I think this is now my new dough.
  18. Just read a review from a New Jersey paper about Santillo Pizza.. Has anyone ever heard of this place? Good or bad, worth trying.

  21. Hey thanks everyone. What a wierd thing.. They flew out of new york and have a huge layover in Philly.. Something must have happened, havent gotten the full story yet.

  23. Hmm.. What do they like.. The father is adventurous.. He would eat anything from bbq to tony lukes and beyond.. But they have friends in philly and have been there many times.. I am looking for a place specifically close to the airport via taxi.. Also, the place should be sit down, middle of the road priced, exceptional food..

    That reminds me to ask about the fridge.. Everytime i leave I am normally running out the door for my cigarette relief.. I havent really given it too much of my attention.. Can someone break down the fridge or talk about favorite items.. Daniel
  25. My girlfriends mother and father have a 6 hour layover in philly.. I understand this gives them enough time to drive to new york and back.. But they want a place near the airport.. A really good place they could eat.. Thanks so much
