OK, Alton Brown fans! Tell me about the eggs in cream puffs and if a replacer can be used. I tried with EnerG egg replacer, carbonated water/cornstarch and neither worked. I'm interested in what the eggs do and if they may be able to be replaced.

If not, is there a similar "dough" I could use? I really want to have something so I can use that delicious filling!

Because there is no added leavening in the recipe, the eggs and steam make the sticky mass double when baked... how to do this without the requisite eggs boggles the mind ...
