OK, Alton Brown fans! Tell me about the eggs in cream puffs and if a replacer can be used. I tried with EnerG egg replacer, carbonated water/cornstarch and neither worked. I'm interested in what the eggs do and if they may be able to be replaced. If not, is there a similar "dough" I could use? I really want to have something so I can use that delicious filling!
