Texas restaurants that serve skate

A few years ago, I had skate as part of the tasting menu at The Driskill, here in Austin. I have developed a lust for it ever since. I have seen it offered for sale at various fishmongers, but before tackling cooking it I think I would like try it out at a few more restaurants. What restaurants in Texas feature a well-prempared skate dish?

Lanny's Alta Cucina Mexicana in Ft Worth had an excellent version of skate as part of a tasting menu a while back. You would need to call to see if they have it on the menu for when your going to be there. I recommend Lanny's to anyone as being one of the best restaurants in the DFW. I have no problem paying $60-80 per person for the food, no beverage. It is that good for me. Of course this is a personal assesment. And I have to drive 4 hours to do that also.

It is good to be a BBQ Judge.  And now it is even gooder to be a Steak Cookoff Association Judge.  Life just got even better.  Woo Hoo!!!

Let's see ... if you can find Shawn Cirkiel still cooking in Austin, check with him. When he was at Bistro Jean-Luc he often had raie au beurre noisette, and it was just dandy.

Also, consult w/Quality Seafood or CM ... they should be able to lay hold of some for you. I believe Julia has a recipe, as likely does Pepin. They are very straightforward to prepare ... it's just getting them off the ray and skinned that's the deal breaker.

A lot of restaurants will not use skate because it is spoils so quickly. I have sold it at my restaurant and had good luck with it, give me a call and I may run it as a special again. I have all my seafood Fed ex'd so I only need a couple of day notice, Plus my place is alot less than 400 miles (47 from Austin)

Mark, I will be taking you up on your offer soon. Sounds like a good opportunity to check out a few Hill Country wineries at the same time, too. Last time I went through Marble Falls, I was on my way to Fall Creek Winery. I also read the glowing review of your restaurant in the Austin Chronicle. I'll be in touch.
