Franci - many thanks for your reply. I'm not looking for clip tops, just simple screw or press tops.

I want to buy about 100, and am hoping to pay as little as possible - hopefully less than 30p a jar. Anyone hane any ideas??

Anyone know where i can get a takoyaki grill/pan/mold ? Prefereably gas , preferably largish  (say 36 ball), but any leads at all on any sort of takoyaki kit would be appreciated.

I think I saw a takoyaki grill at the little Japanese supermarket just off Regent Street - it's the back of the block that has the Apple store on, on the square. I believe the street you take to get there is Hanover Street. IF you can't find it let me know

With apologies in advance for the mundane nature of the request...

Does anyone know of a good source (preferably online) for straight-sided shot glasses, of the variety that fancy restaurants use for amuse size shots of soup, pre-deserts etc.

I'm also after cooking rings and assuming Nisbets is probably the best for this but other suggestions are welcome.

Forgive me fellow travelors for my indulgence but I have developed a deep craving for sea urchin.

The sorry creatures I have bought at cardiff market have got me escorted from at least one local cafe as they seem to have long since given up the will to live and ejected themselves from their casing (through plastic bag) onto the floor.

Does anyone know where I can order a basket of (fresh) sea urchins?

Not sure if this will help in cardiff but .... Atari-ya is at 7 Station Parade, Noel Road, London W3 (www.atariya.co.uk; 020 8896 1552) Open Tue-Sun. Its Golders Green store (020 8458 7626) delivers within the M25 and has details of the nationwide service. Atari-ya also runs the fish and sushi counter in Selfridges Food Hall, London (020 7318 3400).

Can anyone provide a source of tapioca maltodextrin in the UK?

Idealy in amounts under 5kg. - I've done a lot of online searching but no joy.... :sad:

My American grandmother's recipe for lebkuchen calls for carbonate of ammonia as a raising agent.  Where in London might I find this?  I'm currently stumped.

I do normally use it for baking cookies, for now I still have some left, that I brought from Italy (but even in sealed packets it evaporates, in the last I opened it was almost gone).

Since I have moved to London I have not spent time looking for it. I do not recall if I saw it at Gennaro, a deli in Lewisham (try to call and ask for "ammoniaca per dolci" or baking ammonia), or, a good bet would be trying other etnic groceries: greeks or germans. For ex. there is a small greek grocery around Baywater (on Moscow road) you could call. I assumed you live in London...sorry.

Or if you have a good pharmacy there is no reason for them not to order for you. In Italy it is common. Chance is that the will sell you a huge quantity.

The cookies with baking ammonia are very different than baking powder, much more tender. Only advice keep the oven door slightly ajar to let the ammonia evaporate, the smell during cooking is not pleasant but if cooked properly there should not be any residual smell or taste.

If you don't find any, let me know I'll try to open one of my packages and see if there is still some which is not empty, in case, if it's just for the sake of trying, I can send it to you.

Many thanks for this reply- I'm in Greenwich, so I'll hunt up Gennaro's. My aged aunt corrected me- the biscuits calling for baking ammonia are Springerle, not lebkuchen, and quite different in texture! So no wonder the recipe needs this particular raising agent.

This shop claim to sell them and deliver within 3 business days. Cona have their own website and may be able to help with stockists?

A long time since I saw one in use - quite expensive!

The website listing for iberico says they only sell whole legs, which are 7-8 kilos, £50 a kilo. I wish i was a richer 17 year old... :(

or you might want to try buying direct from Spain, via Spanish Taste. Prices look reasonable (from 220 euros for leg, 100 euros for a shoulder, plus lots of boneless cut options) and the shipping isn't too bad.

In Gloucestershire you can buy it at Daylesford farm shop, but you'll need a second mortgage and they're generally clueless about slicing. Suspect the soon-to-open Chef's Table at Tetbury (the new deli/bistro from the ex-Trouble House people) will stock it.

Does anybody know where I can purchase De Cecco Ziti Zita 118 pasta from? A quick internet search did not produce anything. A mail order supplier would be preferable; if not any recommended stocklist will suffice. Thank you.
