Dear Mr. Cutlets:

I can't believe all dead horses go to the glue factory. What happens to our equine friends? I haven't seen any Boucherie Chevalline signs here in Chicago.

And what does horsemeat taste like? Seems to me the fat/lean ratio on a horse is not high enough to prevent it from being tough.

It has a nasty taste; there's a good reason nobody eats it. The idea

of slaughtering young horses for meat is too awful to contemplate. And

with a meat as lean as horseflesh, the only way to eat it would be in

its immature form.

Thank you Mr. Cutlets---I'll never be again ashamed of my reluctance to eat Trigger. If a Confirmed Carnivore and Goat Guru like you says horsie is horrible, I'll gladly take it as Gospel.

Horse is good. Not great, but good. Seared black and blue, sliced on the bias, with crunchy salt and frites.

I haven't had it in a very long while but I would dishonour the memory of Trigger's sacrifice were I to not testify.

I ate smoked horsemeat, sashimi-style, when I lived in Japan. It tasted like, well, smoked meat. It was a little chewy but not at all tough or stringy.
