I have been making a batch of bark for each of my immediate family members for Christmas for years. I include each person's favourite nuts and dried fruit using their preferred type of chocolate. Always goes over well. New son-in-law is a Type 1 diabetic and is quite strict with his diet. He likes dark chocolate and nuts - easy enough. Purdy's (Canadian chocolate company with stores from BC to Ontario) has a no sugar added bar that he likes but they are pretty pricey. I'm looking for something that I could buy in bulk (like a pound or so at a time.)

With the caveat that I don't know the costs involved in shipping chocolate from the U.S. to Canada, I found Supremo, a sugar-free dark chocolate.  I have not tasted it, but it is from Felchlin, a company whose dark and milk chocolate I use for my chocolate production.  It uses maltitol as its sweetener.  Chef Rubber sells a 500g bar for US$8.70, an amazingly low price for Felchlin chocolate.  I know Chef Rubber does ship internationally but may have quantity minimums.

Guittard makes a 72% coconut sugar wafer, Sante.  I've hand dipped with it and it's pretty nice.  They are selling chip version of this at the grocery store in a blue bag.

 

Guittard also makes a sugar free (malitol) milk and dark chocolate. I haven't had these.  

 

These links just to go a store I know carries it.  You may be able to find it somewhere else less expensive.
