I'm trying to get some quick foods prepared for "emergencies", and I'd like to know if I can freeze egg salad. Can it be done without adversely affected the taste or texture?

Sorry, neither cooked eggs nor mayo freeze well. Probably a watery, rubbery mess.

IMHO. NO! My mom once packed a bag lunch for me and in the interest of keeping it cool all day, froze it the night before. Even the d-d ducks wouldn't eat the egg salad. Nasty, mushy mess!

Please don't try it. Eggs and mayonnaise can't be frozen without ruining the texture. The eggs will turn into rubber when they thaw out.
