I've been missing my mom today. Thought I'd throw together her Hot Milk Sponge Cake. It's in the oven now.

This recipe is based on her 7th grade 1940ish Home Ec. book.

HOT MILK SPONGE CAKE

2 eggs

1 c. sugar

1/2 c. milk, scalded

4 tbsp. butter

1 1/4 tsp. vanilla

1 c. flour

1 tsp. baking powder

1/2 tsp. salt

4 tbsp. butter

Scald milk, take off heat and add butter to melt. Set aside.

Beat eggs, add sugar.

Beat until light.

Add vanilla

Add dry ingredients (sometimes I sift/sometimes not, I think it tastes better when I do).

Mix in milk and butter mixture until combined.

Pour into 8 inch square pan. This is a very thin batter.

Bake at 350 degrees for 30 minutes. Don't dance around the kitchen or it will fall. It still tastes good even if it does fall. Eat plain or with jam.

This is so quick and delicious. Sort of tastes like a jelly roll. Yum.

I don't have the recipe anymore but the memory recipe for me is what we called Shit on a Shingle cookies (we had a savory version of SoaS also). It was cocoa, peanut butter, oats and some other stuff that made it into a refrigerator cookie. I would love a tray of those any time.

Ah! That sounds so lovely! Do you have a picture of it? I am totally tempted to cheat on my diet and make this :)

Would the above be AKA Preacher Cookies?

Preacher Cookies:

Mix and boil 2 c sugar, 1/2 c butter, 1/4 c cocoa, and 1/2 c milk for 1 minute. Remove from heat and stir in 1 tsp vanilla, 1/2 c peanut butter, and 2 1/2 c rolled oats; mix well. Quickly spoon into mounds on waxed paper. Or spread in a greased 9 by 13 pan; cool and cut.

That sure looks like them.  But we never cut them, just dropped them like poop.

I made a starter and I finally have a cake of Grandma's Amish Friendship Bread in the oven. I hope. :wub: Keep your fingers crossed this starter is the one, I've been tinkering for ages.

The Hot Milk Sponge cake was, as I recall, the first cake I learned to make. My grandma taught me how to do it. Very nostalgic.
