I don't know how popular this thread will be, but I'll give it a shot.

Over the years, I'm sure that some eGullet caterers have come up with an arsonal of good ideas for pulling off a great event. My quesion is, are there any tricks of the trade that you have come up with and are particularly proud of?

...maybe some creative ways of doing certain aspects of the job that are reasonably tricky? It is a broad question, but its meant to be, so as not to leave anything or anyone out.
