  1. The recipe I made (and tweaked) was the same recipe @blue_dolphin linked to. It was originally linked to by @andiesenji in the "Christmas Cookies Reux" thread here (click). I PM'd andie about some issues I had with the cookie (being too fragile) and her tweaking suggestions worked well. Mr. Kim's version looks interesting. Kim, do you have a picture of the finished cookie? Because of the liquid/moisture in his recipe, are they more like cookie bars of a sort?
  2. I'll take Campbell's Tomato Soup (made with milk, not water). It's a comfort thing and an easy thing, too. When I attended elementary school, we were allowed to walk home for lunch, which, of course, is not allowed these days. Once I fended off the dinosaurs () and got home for lunch, my mom would have Campbell's Tomato soup and a grilled cheese sandwich waiting for me. Total comfort food for me. It gave me the strength to fight off the dinosaurs on my way back to school after lunch. I suppose I could channel my inner Keller and make my own Cream of Tomato Soup but why would I bother when I like the soup Campbell's makes? So it's "Kraft" for me...

    You're preaching to the choir. It sounds like heresy to some, but as I've posted before, when it gets hot here where I live, my oven or my stovetop does not get turned on. I use the microwave and that's it. It sometimes calls for a lot of creativity to figure what I can do with just a microwave for my meals but I accept that challenge. Anything is better than heating up the interior of my house more than what the weather is already doing to it.

  13. There used to be a pot called "The Everything Pot" that came with two inserts, one large insert about the depth of the pot and a second insert that was more shallow for steaming. I tend to use inserts more for steaming veggies than for cooking pasta.They don't seem to lend themselves well for draining pasta while the pot is on the stove. The minute you start lifting up the insert to drain the pasta, you've got water draining out of the insert holes all over the stove top (which sounds like something you may have experienced). Have you thought about getting a colander to put in the sink and then pour the contents of your pot into the colander? America's Test Kitchen recommends this colander for such a use. edited to add here's a video (click) from America's Test Kitchen on their review of colanders and why they chose the RSVP colander.

    I confess I leaned towards their "Stir Fried Rice" flavor solely because of the slivered almonds included with the rice/pasta. It took me years to realize I could buy my own slivered almonds and add them to whatever rice dish I wanted. DOH!

  21. I was looking over my weekly Walmart ad and they had a 6 qt. Instant Pot on sale for $79. I quickly went to their web site but did not find a $79 6 qt. Instant Pot. They had a few other Instant Pot models but none of the 6 qt. models were on sale for that price. Color me puzzled. Your mileage may vary.
  22. Currently snacking on simple walnuts. I buy the big-ass Costco bag that costs an arm and a leg and keep them in my freezer so they don't spoil/go rancid before the contents all get consumed. Right out of the bag they have an almost sweet quality to them.
  23. I used to take Banana Nut (walnut) bread in to work and everyone loved it. One of my co-workers asked for the recipe and was crestfallen to see that I used Bisquick in it. It's what I grew up eating so it wasn't a big deal to me that it wasn't "from scratch". I told her if she objected to Bisquick, she could always go to Alton Brown's web site and find his homemade version of Bisquick if that would make her feel any better. That's more banana nut bread for me...#silverlining
  24. Once again, I step forward with my usual boring suggestion to not throw the cookies away but to use them in a trifle. Or crumble them and use them as a base for a banana pudding pie. The coconut cookies should go great with banana pudding. Granted, they wouldn't be office-friendly but may be family friendly if transformed I'm just sayin'...
