Hsiao-Ching Chou explains why her family's restaurant served egg rolls rather than spring rolls. Egg rolls were expected to be free. And served with mustard sauce. She adds spring rolls may be served with sweet and sour sauce, soy sauce, or chili sauce. At the moment I wouldn't turn down an egg roll myself. Her book has recipes for spring rolls as well as for restaurant style egg rolls.

As I recall the Modernist Bread folks say that if you vacuum autolyze your dough it is at full gluten development immediately, and ready to be shaped.

Last night's dinner was Ankarsrum mashed potatoes. I was so taken that tonight was Ankarsrum mashed potatoes. So good. If I ever see another potato I think I shall be ill.

I don't think I'd ever heard of pork steak before. Anyhow dinner here tonight is probably a pork chop.

Dinner almost did not happen because of a migraine this afternoon. Somehow it did: chicken thigh, peas, and mashed potato. I chilled the salted chicken thigh in the Vesta for a couple hours to dry out and then let the APO do its thing, I've all but given up trying to second guess anova settings but the result was wonderful. Anova recipes are not intuitive. But who can complain about one click? (OK, maybe @rotuts.) For mashed potatoes I would usually boil potatoes, rice them, and then pass them through a tamis. This results in stone cold potatoes of excellent texture. Since I recently acquired an assortment of now unobtainium Ankarsrum attachments, I decided to try the Ankarsrum strainer. The holes in the Ankarsrum strainer are finer than those of my potato ricer or of my Moulinex food mill. And there is a big motor behind them. The experiment was a success. Potatoes were still warm and cleanup was no worse than getting potato bits out of the tamis. The big mess was from the peas that boiled over.

I shall never again make a fresh batch of orgeat and forget to put orgeat in my mai tai.

Could it be a problem with the type of rice? Just for fun I checked some risotto recipes on the anova site. Most call for 2 1/2 - 3 cups of liquid for 1 cup of rice.

Frozen peas are on the menu here tonight. Peas in abundance. It seems I misclicked on the quantity from my last amazon delivery.

Speaking only about the Philips grill: I used mine tonight. The grate has become somewhat less not stick over time but I have never seen any material come off. I still love the Philips grill though I have no idea how it works with bananas. The only food I have had an issue with is fish. -

No experience with either vendor but do they not refund the cost of any unsatisfactory produce as amazon does? If not I see no reason other than to buy from Jeff, or from whomever is running the amazon parade these days. -

Batch 4 was made tonight. Again 120g almonds and 60g apricot kernels. I increased the water to 350ml and the sugar to 300g. This time I did not heat the almond milk and sugar to the point at which the emulsion broke, so there was no need to homogenize. However I expect the orgeat will separate on sitting. The homogenized orgeat did not.

Under imminent threat of a Rancho Gordo bean club shipment, I boiled up a mess of beans. Most I reserved for fagioli e tonno. For tonight's dinner the rest I baked with leftover duck legs as the apogee of unctuosity. Notable that this was the first actual use of the lovely donabe that I purchased a couple years ago. Salad with Momofuku not shown.

In New Jersey sale of cottage food is illegal so people don't have rules to bother with.

UPS said the freezer was out for delivery. I had kind son lined up to help. UPS just changed the delivery to the 16th. I guess I'll just have to chill.
