  3. I can report I'm liking my Demeyere disc bottom more and more. It is now my go to pot for flocked oats.
  4. The anova rep confirmed that the tank he sent really was Mark II. I can't wait to try Mark IV.

  8. I think I was mistaken. I compared the old tank with the new one and I really could not see any difference. I apologize for getting hopes up.
  9. Without putting them side to side it looked slightly different. It's quite possible that I am delusional and it's really a replacement Mark I. If I ever feel up to excavating the closet where I buried it, I shall do a careful study.

    Yes, Sony (which just increased in price $500 today). For financial reasons I'm not yet able to get any Sony lenses. Taking the dinner picture I removed the lens head from a Leica lens and screwed the optics into a Leica close up device, then attached that to the Sony by means of an adapter. This arrangement does not allow focal distance to be adjusted, but fortunately the field of view is about the same as a dinner plate!

  12. Growing blueberries is no problem. Eating them is the problem.
  13. This afternoon I received the new Mark II tank. I am in no rush to equip it as the cracked Mark I is not yet leaking.
  14. I trimmed my blueberry bushes yesterday. Not that I expect any blueberries.
  15. I'd say Kewpie's flavor profile is umami and eggy in a good way. I stock both Kewpie and Hellmann's organic. Hellmann's for coleslaw and tuna salad, Kewpie for Momofuku ranch and Kenji smash burgers. If what you linked was the Japanese Kewpie it was a great price.
  16. As much as I love limes, I juice apples once or twice a week.
  17. I don't own any but I've read at least one. Can't say I was disappointed as best I can remember.

    @Kim Shook for a smash burger effect you have to smash the patty in the pan. I don't think it matters at all if the meat is cold or at room temperature. And now you have me wanting one.
  19. Neither slide in the grooves, however unless I linked the wrong TeamFar sheet pans they fit well in the APO. For Vollrath, don't confuse 1/2 sheet pans with 1/2 hotel pans. The thing I like about the pans and rack I linked is they go together perfectly. Other hotel pans I have don't fit the Vollrath rack.

  21. Not a cookbook and on topic only in the realm of food photography: The Friedman Archives Guide to Sonys [sic] A7R III Kindle Edition. I have an an insanely complicated camera that I can't figure out how to use.
