In my Kindle copy of Cree the recipe on page 112 is vanilla. Page 212 is bubblegum, which calls for strawberry puree. I have a large amount of strawberries rotting in the refrigerator, leftover from my failed Ninja strawberry experiment.

One factor may have been the amount of olive oil. I was preparing one serving of a recipe that serves six. I got carried away by my photography and added the full amount of oil.

I tried again to make something potable out of my strawberry wax candle. I added milk and processed a couple times on the milkshake setting. Better, but nothing good. I think the Ninja is OK but the recipe is horrible.

For a quick chill I often put my wine in the freezer for a few moments without problems (unless I forget and leave the bottle overnight). However this time my 1.5 liter of soave went into the blast freezer for about an hour. Thankfully the glass did not break, but the contents were frozen solid. Blast freezer works great.

I shall never again chill my evening's wine bottle in the same blast freezer as the ice cream.

Batch 12. 90g blanched Spanish almonds 90g apricot kernels 350ml water 260g sugar 20ml orange flower water As an experiment I reduced the sugar to 260g from 300g.

Strawberry Profoundly disappointing. Flavor was good, sweetness was right on. Texture was waxy. Like eating a strawberry scented candle. The little globules one can see, I believe, are bits of butterfat. True, I spun on the "sorbet" setting while the recipe called for "ice cream". I doubt that is the reason. I get the same poor results with conventionally made ice cream when I don't homogenize the base. Any idea where I went wrong? It could be because I used real cream instead of ultra pasteurized. I also learned that focus stacking is incompatible with ice cream.

Wish I could get fish delivered a 1/4 pound at a time. Sometimes I can order 1/2 a pound but usually a pound is the minimum I can buy.

I ordered a Whole Foods delivery for today. There is a line on the invoice for service charge, though it currently is set to zero. Some things I do not understand. Like why I received two packages of duck.

I've never experienced arctic char, but my curiosity is piqued. I need suggestions how to cook it. I now have 0.92 pounds of char in the refrigerator. It came from the Amazon.

Not sure why Kerry has better luck with mango than I do. The first can I ordered got lost somewhere in California. The replacement can was delayed in shipment several days, but finally made it to my doorstep this afternoon. Packed in a paper bag. The can is crushed and rusted. Like it suffered fire and floods. Which it may well have. The amazon product page states "Refund or replacement available". However when I tried to initiate a return I got the error: "This item is not returnable". A kind amazon phone rep was able to remove the charge. The question now is do I want to try to open the can and spin it, or should I be safe and pitch it? The contents are not leaking. Meanwhile Alexa is reminding me I'm running low on mango pulp and asking do I want to order more.
