Ive come across a few of these Vids. via KQED. here is The Master making a chicken dish : 1 ) he cuts off the skin from the leg , along w a bit of bone : what a horrible thing to do w a fine knife ...≥ but wait , there is writing on the side of the knife , and its does not have a full bolster : looks like a freebie from PB , and not a very good knife it seems ! many things might be said about The Master I guess he's a fairly frugal guy ! wonder what happened to the knife after this show. @weinoo never a big fan of BB. it usually is soggy and heavy and ' lacking ' yours looks delicious. I like the addition of raisins and pecans. bet it would be nice toasted. then spread w your choice of spread . cream cheese sounds good -

I also am looking forward to this thread. I too used to cook rabbit for my father. 80's 90's I had to get it at a specialty meat market and it was expensive. I cooked it in a fresh manner w red wine and mustard its very lean and easy to overcook. this was before SV. Im guessing it would do well via SV. easier to not overcook and dry it out. wrapped in bacon , SV , then the wrap browned in a hot pan so as not to over cook the rabbit ?

nothing wrong w GN very very crunchy when just openrd and they will give you extra boots and allure of Fine Nutrition extra nice w pan sautéed , until crispy American Breakfast sausage Jones maybe ? even better w british Bangers but that's not going to happen in my area for several lifetimes too bad ground cardboard ( ie Rusk Risk . ? ) would go well w GNs both have similar origins
