  3. Me too on learning. I will search for our Estonian member posts about rye. As I recall a traditional dense loaf.
  4. Beautiful rye loaf. Those were my old flour proportions but the use of pickle liquid! Where did that come? Your innovation or?
  5. Of what citrus? I like it with a sorta sour orange and skip the sugar. Never used the zest with the onions before - hhmmm
  6. They are good now. Heck they can deal with the car racetrack noise but not the chili?! That is a very fresh tasting fermented chili sauce and always in my pantry. There are so many interesting chili sauce styles to play with.

    Me too - a strong horseradish thinned with a bit of sour cream. Good smooshed into the potatoes too. My fave too with the boiled beef Sunday dinners. (Viennese Tafelspitz)
  9. Nice! I've only made them once with the recipe in Julia Child Vol 2. They were much appreciated by all and easier than they look - and that was just regular AP flour and Knudsen butter (been quite a while). As things calm down I may be inspired to bake again. The recovery home down the road has a culinary training program and the guys are always eager to learn and I like to teach. Thanks for the inspiration.

  11. Oh hell why St Valentine? Allegedly the arrival of Christianity in Ireland but ? Yes I know the Christianization of ancient rites like Halloween, Easter etc but nobody cares. It is goofy and does not hurt; merchants especially.

  14. Worse cuz the stuff does not go on the moving truck. When we did big office suites at night the carpet guys actually had a system where they moved and laid in an orchestrated way. Including those big old file cabinets with lateral drawers.They were worth every penny and the next morning the tenants were equally amazed.
  15. 1st world problems I unfortunately had that issue in the master walk-in closet once. I just had them work around the horrid thing. When they know you have one and you tip them they tend to accommodate.
  16. As many cultures do, we clutch at excuses for holidays. After Valentines on Feb 14 there is a gap till Easter which jumps around. Plus it is portrayed as happy jolly with a "green light" for all day boozing AND you get to pinch anyone who does not wear something green. That is my take from the marketing/consumer angle.

  18. Lemonade - as to North America - it is bleepin cold now! No need for a cooling refresher. I just use the juice as the acid in many preps when it is abundant. The freezing as cubes is great but at some point freezer space could be an issue.

  20. In today's world I think the kids go to YouTube. As annoying and vapid as some cooking shows are my personal survey told me they sparked cooking interest in the young ones. I imagine the books might be amusing to peruse if you were bored.

    @Duvel Interesting soy "meat" experiment. I used to get a salad with a sesame paste dressing at big Chinese market. The "meat" was done in strips like your Fleisch Salat and the texture was similar. Not sure now if it was soy or gluten. I did not realize it was vegetarian the first time I tried it. Oh your plates - they would make me happy as artwork anywhere in the house.

  24. That is how it is in commercial and retail in my experience - you have to be "on the list". When I replaced the roof here the City gave me a list of 5. I rarely recommend to homeowners and tell them to talk to a neighbor or friend who had a good experience or use Angie's List or Next Door dot com. Also the guy you refer to probably pays on time and decently
