  1. Its what I use for corned beef. Cooked SV its tender and cheaper than brisket. Less fatty too.
  2. Big topic and great questions. I'm aware of no one book that fits your bill. Tom Collicchio's "Think like a chef" is worthwhile. Likewise James Beard's "theory and practice of cooking", Bittman's "How to cook everything", & CIAs texts all address parts of your question. I guess if there was one book, it would be Bittman.

  11. Seems to me from this discussion that curry is an almost meaningless term because of the diversity of preparations.
  12. I've had Kobe beef at a top restaurant(lots of sake...I don't remember the name) in Japan. I assume it was the good stuff. To me, it was unpleasantly fatty and lacked a firm beefy bite. I was surprised.
  13. I'm no fan of Kobe or Wagyu. Tastes like the fatty stuff I cut off of steak. Texture isn't like beef either. Nope. I don't like it one bit.

And while not apparently anyone's complaint here, there is also the time when you were a child, ate something, became violently ill (which may or may not have been the food's fault) and have never eaten it since, due to the power of the negative memory. Don't almost all of us harbor at least one of those? Reese's Cups....BARF!
  18. Great references huiray. My own experience with cilantro includes both soapy taste in the leaves and stinkbug taste in the frilly dill-like foliage that grows as the plant is going to seed. Elsewhere on eG cilantro lovers have described the taste as slightly minty and fresh...which is foreign to me.

  22. I have to believe that there are spices /flavor profiles (I hate that expression) that are disliked by large numbers of people. The Great Curry Debate points to one cuisine that is not universally enjoyed. The absence of Indian chain restaurants might be considered confirmation that at least in the US, Indian flavors aren't appreciated.
  23. I participated in a series of posts similar to the current curry issue, except regarding Mexican food. The arguments were basically identical. Either "How can you dislike it all when the cuisine is so diverse?" or "You haven't had the really good stuff". My response was in essence I've been trying to like it for decades and just don't based on extensive experience. Not sure how to resolve these two positions.
  24. I'm with you. She is loud, boorish, dumb-looking, says stupid things, cooks what looks like crap. What's the appeal?This demonstrates that much of the invective directed towards Paula Deen has much more to do with who she is then what she did. People need to know their place. Ms. Deen was to uppity for those of us with much higher intellect and much better taste. She should have been happy to sell sandwiches on the street Of all the fucking nerve. Go get a job at Wal Mart. None of us important people of high culture would dream about going there You have read an awful lot into my saying that I don't see her appeal. I think that she's been treated unfairly even though I don't agree with what she said/did or like her product.
  25. Ahem. I was addressing one aspect if this issue with an entirely apt analogy. A worker's product is property of the employer. If this woman was asked to develop recipes the employer would own them.
