Moe's breakfast yesterday was grilled sausage in a homemade "ball park" style bun and for today's breakfast, I made him a breakfast sandwich on one of the buttermilk biscuits I baked this morning topped with a fried ham and chive omelette and filled with cheddar cheese.

OMG!!! I didn't realize that they made a new 500 model. Thanks to everyone here, I have three of the 300N1 ovens. I bought the second one as a back up as recommended here. But after two years in the box, I opened the second one to use just for bread. Had a stone cut so that i could bake up to 13" to 14" baguettes and I basically just use the first one as a toaster. Then I found one for sale on the local facebook market place for $50 and bought one for work.

Made another batch of the Homestyle White bread and this time as requested by Matt, I made eight crusty rolls with the dough, and a pan of Ball Park Hot dog buns. Moe loves the hot dog buns served in some Ball parks where they are split down the top of the bun, rather than the side. And for dinner, Moe had a grilled Bratwurst in one of the small crusty rolls.

Today's bake. Decided on the spur of the moment this morning to make a Homestyle White bread dough and use half to make dinner rolls. Started the dough early using the autolyze, stretch and fold method. 1000g of flour, 5g of yeast, 15g of salt, 375g of whole milk, 325g of water and 1/2 cup soft butter. Baked one loaf and a pan of dinner rolls. Rubbed with butter just out of the oven. Moe and Matt each had one of the rolls while still warm. With more butter of course. I forgot how much Matt really loves dinner rolls. Need to make these more often.

@Shelby, I just love when you share your feasts. Last night's dinner. Something that I've never made made before. But saw fresh squid at the fish counter and decided to make Calamari for dinner last night. Served with Toum, a Lebanese Garlic sauce that made the perfect dip. I cut the squid into rings and then soaked for a couple of hours in buttermilk before tossing with a combination of flour, cornstarch, baking powder, salt, pepper, cayenne and oregano.

We had gone into Victoria this morning and had planned to have lunch when we had finished shopping. I couldn't think of anything that I actually wanted or a restaurant I actually wanted to go to. So decided to just come home and make an early dinner to eat while watching our Blue Jay's play the Yankees. Tonight's dinner. Chicken Cacciatore Roman Style (no tomatoes). With addition of Cremini Mushrooms. Love this recipe that @JoNorvelleWalker shared. Served with new potatoes and spinach sauteed with garlic and lemon.

Originally planned to make Pork Chili Verde for dinner tonight. But when I got to the store, the butcher had two beautiful racks of lamb that I couldn't resist. Bought both. One for the freezer and one for dinner. Seasoned with fresh local garlic, rosemary from the garden and a mix of pink, white, green and black peppercorns. Drizzled with olive oil. Grilled the rack and served with a homemade mint sauce. Moe's Plate. My Plate. Sides were local new nugget potatoes with garlic, butter and dill and fresh asparagus.

Moe's breakfast. Ken Hom's Lemon Chicken. I'm working today and taking the same for lunch. I need to make this more often. Easy and so good.

Today's bake. Eight mini Baguettes. Perfect sandwich size. Dough was given a 4 day cold fermentation. Taken out of the fridge in the middle of the night and baked early this morning. Sliced and made Moe a sandwich for breakfast.

I made Moe very happy last night with my Caesar salad. Homemade dressing with a coddled egg, homemade croutons, with blue cheese and served with a grilled chicken breast. It isn't often he gets a salad for dinner. Those that know me, know that I could care less about salads. I can make them, I just don't care about them. The recipe is our favourite Caesar salad is one that I have been making for 46 years. Original recipe calls for Roquefort, but when I can't find Roquefort, almost any blue cheese will do.
