  1. Had some Canadian Pots from PEI, Martha's Vineyard and Wellfleets today. Man oh Man they were good
  2. Eg has worked for me every time. Pop into a state or city forum toss in a question and watch the replies roll in. I usually have too many choices and too little time the hard part comes figuring out which places are a must visit. Don't always ignore the places listed on the blue highway signs. For example in VA I would have missed out on Dixie Bones BBQ in Woodbridge Va and there is a real nice German restaurant heading south on 81 on the other side of Va. Sometimes you have to take a shot and pray there are alot of rest stops later if you make a bad call...wait thats another thread all together

  6. Well certainly worth the wait. Nice pictures. I had same issue with the tart but I don't know if extending the cooking time would of helped. I thought it would brown too much and ruin it and I could not chance it. So the unanswered question was the results worth the effort overall? Will you be pulling together other menus from this cookbook in the future?

  8. Man that looks good. What do you have with that wine or coffee? Not that I would drink wine at the in the early am but it just seems to call out for something crisp and cool. A decent apple or non alcoholic beverage. It just seems regular "breakfast drinks" would mute the dish.

  10. Forging ahead with the peas is shear dedication. The morels look great.....Must have steak and morels for dinner. It looks like it is coming together nicely. Yeah Bill, would you like us to bring anything?
  11. Ahh probably my favorite place in philly. I hoped I could get there tonight but by the time the work day was done it was very late and time to wander home. Bright side is I will be in soon. God I love the oysters there. Congrats.
  12. Bill, Did the tart for a church fundraiser on Valentines day. You can make that early it will hold in the fridge at least 24 hours if you have a container with a seal so it doesn't pick up smells. It comes out really nice. I went le halles and julia for the rest of my menu however, fewer tools and had 2 seatings of 35 so it could not be as involved. Love what your doing, I wondered what it would take to acuatually make something other than the tart. Thanks P.S. I think the tart recipe alone was worth the price of the book. But I'm biased if its lemon I'm lovin it!
  13. Its the Bear Claw guy...Thank you so very much for the photo essay. After I take the girls to baseball in the am I have to give it a try. I'm a pastry whimp. It involves measuring and math and patience of which I have little. I asked for the bread baker's apprectice for Christmas but I think my wife decided to save me from a world of dissapointment. Off topic a bit did you buy a proof box or build one. I did the cardboard box thing and I don't think I got the results I should have. Problem is I am too clueless to know any better. Thank you for the adventures in pastry. I can look all I want and I don't get any fatter, from the pastry that is....maybe I'm on to something.

    It was chilly today so I took advantage of probably one last day to do some braising. The parsnips looked particulary nice so I made a beef stew with parsnips, carrots, baby red potatoes and nice Beaujolais. I also baked beer batter wheat bread which I took out of the oven and ate with bleu dau vergne Cheese. Sometimes its nice to work at the "home office"
  15. First thing I do after I cook a chicken is flip it over remove the oysters, dimantle it into breast, legs, thighs, etc. then I pick the back clean. Dat's were the goot stuff is.
  16. This looks like fun. Maybe I can stay on my diet, well maybe I should start my diet, and just look at all the yummy baked things. Hawkeye just looks like trouble...in a fun sort of way. I would love to see what you do at work, it sounds very interesting.

In addition to all the praises for pickles above are the endless variety of pickles in asian food, blow your head off peppers, Kim Chee that makes you sweat and grin like a fool at the same time and then there were mom's pickles Dill and Bread & Butter Pickles. Sadly, I have yet to duplicate her pickles to this day. The store bought ones don't even come close.

  19. I am glad to hear you and your family are safe after the earthquake. I was showing my daughter, the taller one in the picture, your blog and all its pictures. She loves Pocky and any movie by Hayao Miyasaki. She kept coming back asking to see them again and again. Then she asked when we were going to Japan... Thank you for yet another interesting week.

    Dinner was the whole package pork shoulder, beer butt chicken, and turkey legs. Coleslaw and Potato Rolls. I used a little molassas in the spritz and the color was amazing. I love spring.
  21. I live out in Chester Co and have been following this thread wondering if I should make the drive in to give it a try....Every time I come away with thinking its a long drive to mixed reviews. The up side is though every time I read this thread I fire up the smoker and have something tasty. Still try to get the brisket to come out real nice I think there is a real art to brisket. I can't imagine having to hot hold it after I got it right.
