  1. My recipe calls for all of the above and a big glob og demi glaze and a knob of butter at the end. I don't know if its accurate I just know I love it.
  2. I don't know if I would worry all that much about them. They cannot compete when it comes to oysters and I don't think you will lose long term or business client to them, at least for long. I have been taken to the oyster house on many occasion for business lunches, I love when that happens, for the past ten years. I have done and suspect I will continue to do a lot of business at your tables. Let the tourists have their place. Less complaining and we tip better

  5. This is what I am going through right now. over the past 3 days I have 1 hot dog, 1 sandwhich, a glass of tomato juice and 4 pringles. That's it. I'm in a serious rut. Nothing interests me except the food in this week's blog and since I don't cook indian food I won't be eating that either.

  7. I love chicken with 40 cloves of garlic. I made it once, on a Sunday when my, now wife, was out of town. It was true love. I used a 1/4rd chicken with EVOO and carrots and baby red skins cut in half. I sprinkled flat leaf parsley, minced, on the top with S&P and baked. The potatoes where great, the chicken and garlic with crusty bread was Fantastic. The carrots, however, were overcooked. I reaked of garlic so bad I got sent home from work. I also love beer butt chicken, originally typed as Bear butt chicken (there's a flavor profile), as well as chicken with H de P, lemon and thyme.
  8. I had vindalo (sp) my brother in law who followed my lead had black pepper chicken. He followed my lead and asked for spicy as well. At the end of the meal we were sweating like we ran a Marathon, but oh boy we were happy! We actually split the dishes. We had a mussel app., a tomato based soup that was outstanding and somosas. The BIL order some really nice bottles of white wine, crisp, cool, it took the edge off and was a really great combination. The restaurant has been written up as one of the best in the DC area. It is on rt 123 chain bridge road. It is out a ways but it is not a bad drive. The rest of the Fam had chicken tikka, the girls, left, had tandori chicken for the first time and loved it.
  9. Have you tried the indian restaurant just outside of Fairfax, VA? I think it is called the Bombay Cafe. I told me its very spicy, I said, unknowinglike, yeah I like it spicy make it the way you like it, they blew my head off! One of the best meals I ever had.
  10. As many egulleters that could make it to Pennsylvania for dinner. I can't imagine a more interesting or animated crowd. That is if they promise, not to criticize the food, help prep and cook, if inclined, bring their favorite dish, kids and most importantly be willing to clean up after
  11. That's it I'll never eat again! I can't bear the dissapointment of eating anything after looking at these pictures. If its possible you can actually taste the dishes in the pictures. Why try anything else.
  12. No I heard the music as well. Waaaah someone moved my pot! I would have thrown the 86 pan at his head. I can see it now... a whole line of 86 cookware. It brings out the "loser in you" Tarnation what tis dat thing I'm smellin thyme...what you mean thyme was dur a clock ur something? Of course I did like the cocky line cook from NY getting dissed for her tough omelet. That was funny. I would love to see the judges off camera. I bet it would be a scream to hear what they really think. " Did you see his face when I told him to finger the Banana?
  13. I was waiting table in a hotel facility. Huge party 100+. Some idiot gets up (I told him I was behind him) while I'm trying to pour coffee and slams into me. The whole pot goes down the front of this very buxom lass in a white low cut dress. I grab a napkin shove it in a water pitcher a start patting down her clevage. I look up and her date, I think it was her husband, asked me if I was enjoying myself. I look at my hand think oh @#^& ! I froze for a minute. Dropped the napkin and walk right out of the place and into the nearest bar. She was nice about it. I can't say the rest of the table was though. Boy did that day suck.
  14. Three pages of fantastic postings. What a start. I confess I am a bit intimidated by Indian food I don't know why I love to eat it, cooking it that's another story. Other than baking its the only type of cooking that I don't attempt. Wonderful start! "Spiderman endorsing prunes" I'm still laughing over that one.

    Here is a copy of the menu from the luau I threw in 2004. Like I said it was fun to make. Sourcing wasn't really a big issue the web made it a snap. I even purchased orchid leis which where flown in fresh. They were a huge hit with both the men and women. The kids liked them too but they got plastic they were tearing around too much the leis would not have lasted a second! MENU Apps: Hawaiian Ribs Jamaican Ribs ( I know not authentic but I would be shot if I did not serve them at my parties.) Saffron Clams ( I know not authentic but I would be shot if I did not serve them at my parties.) BBQ Shrimp wedges w/mango,papaya,pineapple chutney. Paper Chicken Meatballs (these where in a Ponzu sauce with sesame seeds and sesame oil) THE MAIN EVENT Macadamia nut crumb crusted, stuffed pork loin w/ up country bean sauce Apple wood Smoked Salmon Lomi Lomi with Goma (black sesame seeds) and Cilantro oil ( I know you don't smoke Lomi Lomi is just put it in the smoker so it would pick up some smokiness; it was still raw) Chicken Hekka Pulled smoked pork Kalua Teriyaki BBQ Brisket ON THE SIDE: Poi (flown in from the island) Blue Sweet Potato w/coconut cream (flown in from the island) Bok Choy Salad Cole Slaw Baked Beans Rice w/ coconut milk and pink beans Sticky Rice (flown in from the island) GROWN UP DRINKS OVER THE RAINBOW PUNCH FLYING FISH FARMHOUSE ALE

    Wow! What a response. North Africa or New Zeland? I love throwing big parties and cooking the food for the luau was a blast. All sorts of new tastes. I'll post the menu later it is on my computer at home. Please keep posting ideas. Once I decide I'll figure out a menu, cover sourcing and cost then prep and party pictures. This will be Huge fun.     Summer Party

    In the last 4 years I have done a meat feast, madi gras, luau and a low country boil. I have been kicking around a Mexican themes, Italian, Middle Eastern and but for a big rockin party I keep coming back to another luau. I hate to repeat myself but I have but a primitive stove and oven and all the rest must be accomplished outside on the grills or in the smoker. This really is not an impediment to the preparation however hot holding and keeping things cold is a challenge because of the distance between the fridge and the pool/field. A difference this year is I will have a China Box so a whole pig will be a part of the festivities I usually serve 60-80 people. The luau was a big hit and a heck of a lot of fun. I'm game to do something different but I am a little short on ideas. The only requirement is to be festive and to inspire lots of silly behavior...I have to blend in

  21. He didn't fish OR Drink? Now there you go. It was ment to be. How can you get through life without fishing or drinking? Why you would be a fish out of alcohol? Simply unacceptable that is. The first thing I taught my girls was how to fish, then cook. At ages 5 and 7 they can learn the other stuff later. Go ahead a grill up a nice piece of Salmon, grab a nice crisp bottle of wine and indugle in life again! Doesn't fish....mutter .. mutter As if he deserved someone like you. Hah!

    If the budget is a little tight London Broil or skirt steak sliced thin go a long way and get raves as well. If you are a member of Sam's, Bj's or Costco a pork loin about $20.00 cooked on the grill with a peppercorn rub, I'll supply the recipe if you want, will feed a small army also popular. Just by some rolls, saute a few onions and peppers pull together a few condiments, if necessary and instant meat course.
