    Living in New York makes me jump at any opportunity I have to use a grill.. Rain,snow, it doesn't matter.. As long as their is fire, charcoal, and smoke, I am a happy guy.. This weekend we went upstate and had the chance to use a smoker.. A foot of snow was not an issue.. We smoked three racks of ribs, bacon wrapped boneless trout, and quails.. For sides we made sharp cheddar mac and cheese, coleslaw, and eggplants baked with peanuts.. Ribs: Rubbed in the love.. Smoked for 6 hours: Trout: Stuffed with a local Berkshire Bacon Rizzaped Here is the top grill Sides.. Awesome Mac and Cheese.. Had this for breakfast and lunch.. Just fantastic.. A half pound of local sharp cheddar.. Eggplant baked with peanuts This dish is really exciting to me.. You take eggplants and bake them.. You then skin and chop.. Mix with peanut butter, garlic, pepper flakes.. Then top with bread crumbs and peanuts.. Bake it.. It was fantastic on its on.. It would be better stuffed into a pork loin or something else. Dessert: Bourbon Pecan Pie.. This time with dark and light syrup.. I have the grade B maple version coming up soon.. Homemade vanilla... We served it warm and it was super oozey.. Just lovely:

  3. Well I cant say I am happy to be posting here.. But, I guess its time to make a negative into a positive. If I can get one person sick, then it was all worth it.. I dont know what a second degree burn is, but if that means all the skin in an area melt off, then thats what I have.. Caught my finger on some charcoal while throwing woodchips in my smoker.. Good thing there was snow all over the place last night.. I think it helped big time.

  5. Jamie, You are a rock star.. I love reading your blog and hearing about your adventures. Your humor(Santa, an aging milk and cookies gourmand ) Your photos, your knowledge and of course throwing in beautiful women has certainly captured my attention..
  6. Well put, indeed, when you "honor" the pot! I "honor" not only pots but pans, mixing bowls, spoons, you-name-it ... It is those unseen calories which don't make it into the final, formal dish, which taste oh-so-sweet! Thanks for the thread, Fifi! ← Melissa, I dont even know if the unseen calories actually have an effect on the body.. Its really anything you eat on the plate that is fattening, There are many meals I cook, where I am full before I finish making..

  10. I made some last week that were really good.. Yellow corn flour, roasted garlic, a pinch of rosemary, and some truffle oil..
  11. Yeh, Gari is a place I just cant get into.. It just seems like a rich persons safety sushi place.. It reminds me of what LCB is.. Solid food, very expensive, nothing ground breaking or superb..I went to Gari the other day.. Dropped three bills and would have been happier eating at home..

    1)BBQ was too predictable in my book.. I was throwing a PorkFest and didnt want anything that people expected to have.. Also, living in Manhattan, I dont eat BBQ unless its smoked..(Actually as I am writing this, I am watching my smoker outside my place upstate.. I have three racks, bacon stuffed and wrapped trout, and some brandy soaked quails going)Boiled pork with some sauce gooped over wont be found in my kitchen.. I did serve bacon, not pictured, but I had them in sticks standing in a bread stick container.. 2)My pals did know it was going to be a PorkFest.. The alternative was hanging out and drinking beers.. But everyone complied.. 3)There were no side dishes.. It was funny because as I was planning the menu, my girl reminded me that there was no vegetables or side dishes.. I was well aware.. This was a PorkFest, so vegetables had no place.. I served each dish in stages, not buffet, so each dish was a seperate course not needing side dishes.. 4) I definately think I will do a PorkFest Part Deux.. I really need my friend who just moved to Seattle to be there.. And now that I have some credibility with my friends I can serve other options.. Liver, spleen, ear salad, and anything else.. 5)Go for it.. I wish I had read this earlier.. I would have thrown some in the smoker.. I think life is boring if there is nothing to look forward to..
  14. Since you guys are baking pies I figured I can ask this question here.. One of my favorite apple pies, a caramel apple pie actually, was cooked in a brown paper bag. .I was wondering if anyone has tried it or know what that does?

    That does look really pretty.. I think thats the nicest looking lamb shank I have seen on Egullet.. Its missing the slime that my picture had and most do..

    Never had a brie fritter.. Sounds really good.. One thing I have been wanting to do for awhile is adding a phyllo rolled piece of camembert to a salad.. Letting all that oooze out..

  20. Good for you Megan.. What does one have to drink? Soda, wine, coffee or juice.. But if you think about it using the Bill Cosby chocolate cake theory. It has eggs, bacon, pasta is like bread.. Hell its better then most breakfast foods..
  21. So after frying up a duck leg i had fat left in the pan.. Fried popcorn kernals in it, put parsley and salt on the popcorn.. I was thinking of putting a port syrup on top or to dip in. But was lazy..

    Made dinner for myself tonight.. Defrosted a duck leg..Pan fried, served with grits, parsely shallot salad.. Port reduction on top.. It was very good, very simple to make with big results.. Not the best picture.
  24. Are you positive about that? In every case? Aren't there examples of smokers who live healthy lives and die in their 90s? ← In terms of impacting ones health, that can be measured.. But someone can have their chances of dieing increased without actually dieing.. Like a drunk driver is increasing his chances of dieing, but might get home safely.. Haha. I dont know if this will make sense after the wine wears off..
