  1. Thats funny.. My mother razzed me as I left the Market for not buying scrapple.. She told me I loved it as a kid.. I didnt buy scrapple, its one of those things that I need to prepare for.. I might do my own private Scrapple Fest..
  2. Whatever.. I think the most exciting and innovative things coming out of a Danny Meyer Kitchen are the concretes at Shake Shack.. And they arent too exciting..
  3. This book was the first book that actually made cooking make sense to me.. With amazing pictures and step by step direction, it makes me wonder why all books dont utilize photography as a tool, the way this book does.. For people who are visual, this book is a dream.. I have made about 30 percent of the recipes and there isnt a dud in the bunch... Breakfast to ham hock terrine, this book is important to me..
  4. I mean, to this day,dressed in a tuxedo, I might grab slice of pizza or something off a room service cart if the situation calls for it.. I certainly aint a Freegan, just a kid in need of some nourishement.. Room Service carts in the hallway is the classy guys dumpster dive..   5. Reading Terminal is actually a big one of these.. And these are actually a big version of a regular market.. Reading is way more sophisticated and wordly.. With strong Italian and Asian influences that dont exist at the Dutch Market.. In terms of finding the market you will have to Mapquest it.. Either use Princeton or Kingston as the town..     Dinner! 2005

    Strickened with the ear funk, Sunday Sauce must go on without me.. The girl of all girls cooked up an impressive Cuban Feast.. We started with homemade chicken and cheese empanadas and homemade croquettes jamon.. These were fried perfectly in lard of course.. Very impressive.. Here is the plate on the table for four people.. Way too much in typical fashion.. Here is the breakdown of the empandas... First step: Second Step: Third Step: ? Fourth Step: Profit.. (Thats my South Park reference of the evening..) Here were the second courses.. Served buffet style in there pots on another table in the dining room.. Counter Clockwise.. Boiled Yuca with a garlic sauce.. Ropa Vieja, Soaked and slow cooked black beans,picadillo over white rice.. Everything was awesome! What a great job she did making all of these dishes.. A bowl of Cuban Bread of course.. For dessert.. Rice pudding and a rum cake.. Great cake.. Dark rum is the only rum you can use for a cake.. Very good..
  7. Pennsylvania Dutch Farmers Market 4437 Route 27 Princeton NJ 609.497.0636 This Market is a favorite of my family's.. Because my mother grew up with these type of foods and people this is really special for us.. The foods here takes me back to memories of her parents and family and being there for holidays and special times.. Though commercial by there standards, the products here are still hand made using the tradition and care of there culture.. They have everything here.. From prepared foods, to deli and butchers, to dairy products and baked goods.. Its all fantastic,fresh, and natural.. This is my health food store.. As luck would have it.. Yesterday was the last Saturday of the month so it was Pig Roast.. This meant on top of serving burgers,fries,hot dogs and lemonades at the grill they also served pork sandwiches.. Pretty good stuff.. Not smokey, but cooked well with a sweet sauce.. After picking up my sandwich I went to the prepared food section.. Here they have a wide range of cooked meat items and sides..You can order these to stay or go by the 1/4 pound.. Some sides we ordered were mac and cheese, spinach souffle, potato ogratin, and some green bean with swiss cheese.. For dessert we had pretzels.. Made and cooked right in front of you.. These are fantastic.. These things are butter pretzels.. The best I have had.. A pastry almost, you squeeze them and the fresh butter oozes out.. Didnt get any this time, but here are the selections of homemade ice creams.. After lunch we walked around.. I walked passed the butcher.. He had beautiful pork bellies.. Shaved pork butt, and a gorgeous smoked hocks.. I was on my way to Griggstown Quail Farm so I did buy much besides this turkey bacon.. I didnt like the fact that it was pre-sliced.. So were there other cold cuts.. Oh well amazing Summer Sausage and Ring Bologna.. The have a great selection of dry goods.. I bought rice flour, sweet dried corn, and dried apples.. They also have great baked goods.. I often get the homemade potato chips.. I have had a lot of their cakes and pies. I love the pumpkin roll.. I, despite the haters, love Shoefly Pie. They have a good version.. Here is a quick rundown on a few options.. Red Velvet Shoe Fly : Pumpkin Cake: Molasses Cookies Mousse Pie: The cheese sections alone would be 20 photos. This is a great place..
  8. Many times in my youth did the answer seem to be joining the tour and selling dollar grilled cheeses.. Definately the first time I considered cooking as a lifes profession.. But the grilled cheese game was far from freegan.. There is a lot of money to be made with no overhead and thousand time mark up in an all cash business.. ..
  9. Went to the P-Dutch Market yesterday and bought lots of good things.. Turkey Bacon happens to be one of them.. Put the bacon with P-Dutch butter on Cuban Bread.. Added two fried eggs and then pressed the sandwich on the grill..
  10. Nice photos Kobi.. I am a provo whit whiz through and through.. And I too will argue that Pat's is the best.. One more recruit just in case the ominous "steak wars" ever come..
  11. I have had tres leches cakes... This is the best.. I prefer the merengue to the whipped cream topping.. On this particular cake, the merengue is stiffer and not as airy as others. Almost like a marshmallowy fluff feel Its Gooey.. .. I have seen other merengue recipes for a tres leches and this one called for the most egg whites.. (6) The cake was great too.. The leche mixture was fairly normal. Equal parts condensed and sweetened milk and cream.. Then sugar and vanilla. Its a solid cake with a spectacular merengue.
  12. Here is a picture of the orange pecan pie.. We used candied orange peels and orange zest.. Tons of Karo Syrup and a little bit of bourbon.. I brought it for Thanksgiving and it was eaten for lunch before dinner.. It never made it to the table.. Very good Tres Leches.. This recipe is from my girlfriends grand mother.. In traditional Cuban fashion a merengue is used instead of whipped cream.. Basically a mixture of sugar and water is boiled an added to six egg whites with soft peaks.. Whipped super stiff.. We made it today in my mothers kitchen.. Was a quick and easy cake to make among the confusion.. Cake Slice:

  14. Sorry about your experience Luckylies.. I have been to EMP a couple of times and find it all a bit dull.. Its close to a showroom I have, and I sometimes take out of town customers there.. I am sitting there picking at my expensive boring dish, while they are still shocked by the space, loving the food.. I hear the bloody mary's are good there..
  15. Funny story. I just made it my mothers house and we sat down for lunch.. Well my Orange Pecan Pie never made it to dinner.. It was eaten with in 20 minutes of arriving.. The eggs were the fresh ones.. How typical.. Happy Thanksgiving..

    You know.. I have only been eating Pork for about a year now. And have yet to eat spam.. I have had pork roll!!! There are a bunch of parts missing from this dinner.. I didnt include, liver, blood,spleen either.. There might always be a P-fest Part Deux..
  17. Ling, I dont know what staging means, but thats awesome... How exciting for you and I am sure you will be great!!! Double boiled eggs means I cooked them on a double boiler.. Took eggs mixed with a table spoon of butter.. Added a table spoons to a pan placed on top of a double boiler.. When the butter melts add the egg mixture and stir for like 10 minutes.. When done, stop the eggs from cooking with cold cream.. They are really good..
  18. Made a Ham Steak with Red-Eye Gravy.. Basically fried the steak and then simmered in coffee for 20 mins.. French style eggs with a lot of white pepper.. <double boiled eggs> Fried Potatoes and an English Muffins.. Nice breakfast to last me to dinner..

    I would definately put it in a blender.. Dont overfill the blender and use a towl to hold down the top...

    Dinner! 2005

    Chesnut Soup.. This is my girlfriends new favorite soup.. I had to shell two pounds of chestnuts.. Used pork stock, white wine, brandy and a little cream.. Blended it until smooth.. I thought it was very good.. But my two pointer fingers are raw from getting shells underneath my nails.. So I am still weighing the pros and cons This chicken recipe was from Scott Peacock.. I cut a chicken into 10 using the back and neck for flavor.. Cooked in butter.. Added celery and an onion.. Boiled with a couple cups of rice. It was this super chickeny comfort plate.. The taste of chicken was super strong and rich.. Had to serve with a slice of buttered Wonder Bread.. And some cold white wine.. This dinner was supposed to be so many things.. From oyster stuffed duck to fried chicken.. Somewhere along the way I ended up with some turnips.. I baked in butter.. Then covered it with flour and milk.. It went well with the white comfort food..

  23. yeah butter is expensive too.... (about $3 for 3/4 of a pound...) but since I will save money on the cream... The sushi is cheaper over here though! ← Haha.. I was going to say.. Substitute the cream for uni. Some good fish to mix has to be cheaper then cream...

  25. Patrick, Everything looks so perfect.. I wanted to single out just how gorgeous that souffle looks.. That is text book, protractors involved type shtuff.. I dont think I have ever seen a better looking souffle.. But then I noticed the ginger cake, again, cut perfectly.. Perfect on top, looks super moist.. All the way down the line, you create such great things..
