What to do with the turkey liver?

The turkey arrived. An excellent Norfolk Black from Peeles.

However it brings with it the annual conundrum. What to do with the liver?

Chopped turkey liver (bit strongly flavoured)?

Add it to the stuffing?

Coarse pate with pork, chestnuts?

Fine pate with cream, brandy etc?

Any other suggestions? What do you do with yours?

Cook's snack.

(IMO it's just a little too strong-flavored to include in the giblet gravy or stuffing. Or more accurately, it wouldn't be too strong for me personally, but liver-loathing friends I've cooked for wouldn't be happy.)

I've never tried with turkey liver, but can it be seared like a slice of foie gras, maybe with some prunes soaked in Madiera and flamed and tossed with the fat that comes out of the liver?

Sear in a screeching hot pan, and rough chop with some good olive oil, salt, (lots of) garlic, and cilantro. Eat with good crackers or toast points.

I always attempt to have the ratio of my intelligence to weight ratio be greater than one. But, I am from the midwest. I am sure you can now understand my life's conundrum.
