Horseradish sauce for Prime Rib...

I am making Prime Rib for friend's this Saturday (my birthday) and Since I'm spending over $100 on the meat I would like the best condiment to go with it. I usually use Haus Barhyte, and have had Inglehoffer, but am wondering if there is anything better easily available in Seattle.

horseradish sauce is also really easy to make.

you can grate it fresh if you like, or buy prepared horseradish (not cream style) and blend with lightly whipped cream and salt. simple and delicious!

from overheard in new york:

Kid #1: Paper beats rock. BAM! Your rock is blowed up!

Kid #2: "Bam" doesn't blow up, "bam" makes it spicy. Now I got a SPICY ROCK! You can't defeat that!

You could make your own. I normally make my own using heavy cream, fresh parsley, some prepared horseradish, creme fraiche and a little kosher salt and some white pepper.

The nice thing about making your own, is that you can adjust the taste and heat intensity to your liking. I use a combination of fresh grated horseradish and some extra hot bottled horseradish (I like the vinegary kick it gives). Then I add a bit of sour cream (although I imagine creme fraiche would be wonderful in this as well), salt and pepper. If it doesn't have enough kick this way (horseradish varies in intensity) I add a bit of dry Chinese hot mustard--really gives it a nice bite.
