every now and again i'll make something from one of those magazines. usually with good results.

this month's Food & Wine has a cucumber and tuna tartare soup that i'd recommend. i was *very* pleased and equally surprised. it's dramatic looking and a perfect summer soup.

That looks really interesting/good.

Did you really sear the tuna for two minutes (seems excessive)? I think that I would be tempted to just dice it up uncooked.

i grilled it until rare. the mrs. doesn't like completely raw tuna, as she appreciates the texture dynamic of seared tuna. i think the texture worked well here. but it wouldn't be too much of a stretch to japanese-ify this dish, which i'll probably try soon. what that means yet, i have no idea, but it will have an elemet of completely raw tuna.

Mmmmm, yeah. I made it on Wednesday night. Delicious, and ideal for a steamy summer night. I couldn't help diddling the recipe, though, and used some buttermilk I had on hand in the soup. And used diced red pepper instead of tomato in the "tartare". Does it still count?

Yum.

I had a chilled cucumber soup this week at Gabriella Cafe; it had guajillo chilis in it, and a drizzle of creme fraiche. It was damned good, and I was wishing I had a recipe for cucumber soup.
