We got a Costco roasted bird and stored it in fridge, thus sogging the nicely seasoned skin. I came to the thread to find out how to re-crisp the skin for my own greasy munchfest, and there is exactly the info I wanted. Muchas gracias!

I was thinking the same thing. That Costco chicken is so versatile, it's ridiculous.

Do you think if I take TWO Lipitors I will recover from this thread? I could feel my LDL rising with each post I read.

(I don't have to share my chicken skin with anyone. The dogs get the soggy bits, I get the rest.)

I don't know how I haven't posted to this thread before. My friends know me for my "skinwiches" -- which I actually first mentioned in a novel with a chef character, and then decided to make myself, since I'd made them sound so good.

Originally it was just a BLT, L optional, with super-crispy chicken skin. I've made them tons of different ways -- turkey skin sandwiches with leftover stuffing and a schmear of cranberry, on Thanksgiving Friday -- but these days if I'm making them for myself, I just put crispy chicken skin on lightly toasted bread with a little pimento cheese, a little hot sauce, and a slice of very fresh tomato if they're in season.

Peppadews are really good too. Or broccoli raab. Or this salsa verde I made with garlic, ramps, ong choy, fresh Thai chiles, and a little oil.

(Yes, I also thought about rolling the skin around some type of dowel, deep frying it like a pasta tube and piping the potato inside.  I quickly dismissed that idea as lunacy.  I'm not even trying to get this woman into bed.)

Next time I roast a chicken, I am doing this. :blink:

O.K., I am pretty sure I could be arrested in at least 3 states for this breakfast, but I couldn't resist! All of that lovely skin from last nights dinner, that I just couldn't religate to the stock pot and some left-over pork belly from a few nights ago. I did throw in a tomato (must have Something a teensy healthy) :wink: Just dusted the skins with a touch of flour and fried to golden goodness in the rendered pork and chicken fat mmmmmmmmm!

Okay... I'm salivating now thanks to that photo!!!

Last night I roasted a boneless turkey breast and ate the skin off the top while slicing the rest for sandwiches. I had to... it just came off in the most wonderful perfect crispy piece.

I have avoided reading this thread until now because it's just too tempting. Count me among the many who prefer the crispy skin to the chicken meat. Here's how I get my fix: my husband loves chicken pot pie. I roast a chicken, eat all of the skin and the wings off it, then remove and set aside the meat. Carcass makes stock. Use meat and stock to make pot pies. Everyone is happy! I'm making a roasted chicken tonight for dinner, so I get to eat skin!

oh, and of course, I have to give a major drool to nonblonde007's breakfast. :wub:
