Nice, will have to download that - thanks for the heads up. Marcus was a pretty good replacement for Jean Michel Roux Jr in Professionals :)

you can watch the clips.  

 

its a shame this has not been broadcast more extensively.

 

there are some good explanations  w/o being pedantic.  leaned a lot about the champagne glass, which invoices what the bubble do

 

vs  different stem-ware and still wines which effect which part of the tongue the Personal Beverage first interacts with : the front of the tongue or the back

 

you get back-effect with a tall glass as you have to tilt your head back to drink from it.

Just watched it (don't ask how). Kind of entertaining, but nothing new.

 

I mean, explaining why champagne tastes better in a flute or tulip glass? I learned that back in high school in the 1960s.
