I do the skirts as pin-wheels.   roll up a carefully trimmed long skirt, use either two strings to tie it up, 1/3 up  then cut in the middle

 

this grills nicely and w the string  ( not bamboo skewers ! ) vac's and SV's up nicely

 

you can then sear the edges.

I do skirt in the bath at 132F, and then quick sear or grill, and it is STILL much  more solidly rare inside than if I did it on the grill or in the pan the whole time
