Basic chili oil from MC at home

I am finishing a batch of this oil and am wondering why storage notes say it will keep two weeks in fridge. Surely this can keep longer than that. It is nothing more than crushed pepper and oil.

There's a small chance that botulism spores might be in it, and the oil provides a nice anaerobic environment for them to grow in.

I hope it is longer than that. I can't use 2 cups in 2 weeks.

Oh yeah, heated oils turn rancid faster lots of cross linking going on what with the exposure to oxygen, etc.

 

Can you make a half-batch? Or, maybe give some away?
