Greeting to the eG community. I've been in the culinary arts since I was a 16 year old dishwasher who showed some promise with a knife. I have held every position in the kitchen, and have worked everything from Denny's to five star resorts. I have won a total of 12 awards in local food competitions, mostly for desserts or confections, and at long last I am in my dream position...Chef ( with total creative license ) of a small brew pub in southern Colorado, in Canon City, The Royal Gorge Brewing Co. Along with a very reasonably priced menu which includes hand cut Skanga steaks, homemade soups, breads, desserts, and our amazing hand made beer battered onion rings, we have a great selection of Colorado microbrews.

In addition, having been well school in many culinary traditions in my 30+ years, I love to experiment and create cross cultural dishes like shrimp piccata tacos, green chile chicken alfredo, chicken fried steak with white gravy made with chorizo, and take pride in offering the very best seafood to be found in Canon City.

We are a small venture, but we are lucky to have a crew that loves food, loves making it exceptional, and who feel both pride and ownership for the work they do.
