Imbibe magazine had a writeup of the various finalists in the Averna Cocktail Contest:

They even spilled the beans on Thomas Waugh's Cocktail for the competition:

HIERBA BUENA COCKTAIL

Thomas Waugh, Alembic Bar

1 1/4 oz. Averna

1 1/4 oz. Don Julio reposado tequila

1/4 oz. white creme de cacao

1 oz. heavy whipping cream

3 dashes Fee Brothers mint bitters

First, to make bitter mint cream: add mint bitters and heavy cream to a cocktail shaker. Dry shake (no ice) for 30 secs. Set aside. Then stir Averna, tequila and cacao in a mixing glass full of ice for 45 seconds. Strain into a chilled cocktail glass. Using a bar spoon, carefully layer the cream on top of the cocktail. Garnish with shaved chocolate and fresh mint sprig.

made this tonight. moderately happy with it.

Gone a-rye:

2 rye (i used rittenhouse)

1 pimm's #1 cup

1/2 averna

2 dashes regans orange

build, cook, strain up. flamed orange peel

the rye is definitely the backbone of this drink but the orange and the averna squabble nicely for second place

This Averna cocktail was a good winter drink. The spices and rye make a great combo and the Averna brings everything together.

Winter Waltz

2 oz rye (I used Bulleit)

1/2 oz Averna

1/4 oz allspice dram (St Elizabeth)

2 dashes Angostura bitters

Stirred, up.

Star anise garnish.
