Seattle - Corned Beef Hash

I'm looking for GOOD corned beef hash - made from scratch in Seattle for my birthday breakfast. It's one of my favorite things and not easy to find.

Are you looking for minced fine corned beef or more rustic larger hash?

Persimmon in Fremont (weekends only?) or Geraldines Counter in Columbia City are good options.

I like both rustic and smaller - I'm not crazy about green peppers in my hash but I can live with it. Geraldines sounds like a good idea - I hadn't thought of that - thanks tsquare.

Since this is a weekday, Persimmon won't work.

For a weekday breakfast, I am very fond of the lightly cumin spiced corned beef at The Dish on Leary Way between Fremont and Ballard - I think it is much tastier than Geraldine's. On a weekend, Etta's is also good, but still not quite as good as The Dish's version.
