Thanks. I can't get tomateo's so I now use this... https://byronbaychilli.com/product/green-jalapeno-chilli-sauce-with-coriander/# mixed with a white sauce or just this alone. I coat the tortilla both sides roll etc and add cream over the top and bake.

Back home from a caravanning trip and not interested in doing much for dinner. The wife said she felt like pie.. OK! Beef pie in a bowl.

Pork spare ribs. Cooked in the toaster oven. Creamy mash potatoes, peas and honey butter carrots.

Time to test the house smoke alarms.. Flank steak mushrooms and chips. Working.. And delicious.

Crumbed chicken tenders and salad dressed with salsa.

Yearling schnitzel, steamed potatoes, peas and stroganoff mushrooms.

Minimum effort dinner.. Chicken Schnitzel grilled veg.

Found a very nice rump cap and chose Picanha for Sunday dinner. Cooked on the Kamado over charcoal. Added some veg bbq style

Tuesday nights spaghetti carbonara.

Salad and chips with lightly spiced breaded chicken tenders.

I find that letting the batter rest is key. Also just before pouring a big spoon of cold water added and mixed. I prefer tallow or veg oil. Also baked at 200c.

Monday Roast. Lamb, veg and gravy.

Toasted Steak Sandwich. Rump, egg, onion, bacon, cheese, tomato, lettuce and beetroot.

Breakfast for dinner. Sausage on thick toast with onions and fried egg.
