I'm thinking that with the Breville, the top (with little headroom) was browner due to direct exposure to the top elements, whereas the sides were shielded by the cake pan. p

@Anna - frozen McCain Steak cut fries olive oil + seasonings (garlic, salt, pepper) or whatever, in a bowl toss fries, 10 min, flip 10 min more in cso, 450 no steam = restaurant fries! You need to use a thicker cut to tand up to the oven otherwise you get overdone tasteless potato chips p

There's definitely something wrong with that pot! I'd call the IP people for sure. p

Thanks chefmd, sounds like something that happens to all of us. p

What was the theory/reason for the chilling step chefmd? p

First off, congratulations on your new acquisition/toy! I hope it lives up to your expectations. I too am looking into such an addition to my kitchen, but have started a new topic: that provides a reasonable alternative. p

Have been actively contemplating an Air Fryer as the results seem to be wonderful. The Philips brand seems to be the best. https://www.amazon.ca/Philips-HD9230-26-Digital-Airfryer/dp/B00SX3ZT16/ref=sr_1_1?s=kitchen&ie=UTF8&qid=1471432866&sr=1-1&keywords=air+fryer However, in the process of my research, I've come across an alternative beast, an infrared oven. Obviously the appearance and construction is very different from the "Philips" type. However the basic technique and claims seem to be very much the same. They seem to be very popular in the UK. They are considerably cheaper than the "Philips" and have a much bigger capacity. https://www.amazon.ca/Big-Boss-8605-1300-Watt-High-Speed/dp/B007P6SAZ4/ref=sr_1_2?s=kitchen&ie=UTF8&qid=1471431624&sr=1-2&keywords=air+fryer I had something similar about 20 years ago and it didn't live up to its claims (or maybe my expectations were too high). The older models relied on a heating coil, the ones I have been looking at use an infrared heat source. Anyone with experience with this "new" generation like to comment on their results/experiences. Would you buy it again? How do the results compare to the "Philips" type of Air Fryer? p

@mgaretz - you certainly makimg wonderful thimgs in your air fryer!! I'm getting very close to pulling the trigger/ Any suggestions regarding which brand/model? On Amazon.ca the prices range from $430 to $140. I don't want to spend more than I have to, but more interested in getting the one that will do the job! p

Good thinking! Sort of like putting a container of water into an oven to encourage "oven spring" when baking bread. p
-
Actually, e-coli has been proven to be bad if not fatal, whereas the other options you mention are only "linked" to detrimental effects. p

Sounds like something I might like but what is the initial investment? As well the process taking 48+ hours seems like a lot of electricity usage. p

I'll assume Oster isn't importing these into Canada yet (if ever). https://www.amazon.ca/Oster-TSSTTVFDDG-Digital-French-Stainless/dp/B01FRT2TRU/ref=sr_1_105?s=kitchen&ie=UTF8&qid=1468773234&sr=1-105&keywords=oster+oven p

Been away from egullet.org for a few months so I'm just catching up. Much earlier in this thread you showed having purchased Clamato, for Caesars I'll assume, for a twist try Tequila Gold/Amber for a richer/deeper flavour. As well I don't bother with "rimming" the glass but rather just add a few shakes to the drink along with a few dashes of Worcester (sp?) sauce. Also that that pullman pan works/fits in the CSO. p

I've done that but then I had problems with width, so I used the Breville. Not tried a goose. p

As the heating bars are quite close to the top of the chicken, i've read that starting the chicken on its breast for about 1/3 of its cooking time prevents the breast from becoming overdone/burnt. Haven't tried this myself, but it sounds like an idea, what do others think? p

Would this qualify? http://www.amazon.com/Kila-Chef-Tri-Ply-Copper-Bottom/dp/B00RF6Z5CA p

I have this one as well and has worked flawlessly for me. There are better ones out there, but what convinced me was its relative light weight compared to oil pump models. p

Did it go into "keep warm mode? p

Yes, the IP is certainly worth the money, but it sounds like the main reason for your post is wanting that "walk away and forget" that you no longer have with gas. I might suggest you look at a counter-top induction burner such as: DUXTOP 1800-Watt Portable Induction Cooktop Countertop Burner 9100MC 15 power levels from 200-1800Watts; 15 temperature range from 140°F to 460°F - very highly rated and will store easily in a cupboard. Considerably less than an IP and can easily be taken out to patio/deck to use while bbqing for sides. If you wish to replace your Logastino with another of the same you should get the same result. p

You know I never really, trusted organic foods! Just kidding, thanks Andiedenji. p

Me too! We don't have a Costco, but have shopped there before when I lived in a more urban area...but Orillia is planning to have one before the end of the year!!! p

Yes the smaller bowl has that weak point but you didn't mention the other positive regarding "all sorts of parts and attachments" - they give you a great box to keep them out of sight. p
