NEEDED: Vegan Baking Advice for a skeptical pastry chef
CatPoet replied to a topic in Pastry & Baking
I still cant get into my head how replacing eggs with bacteria slime is better for you. There so many E numbers and man made weird things in vegan foods today. I actually have a vegan pastry book from the 70 ties somewhere with zero replacement products and if I remember correctly some of that stuff was good. I just wish I could remember where. -
NEEDED: Vegan Baking Advice for a skeptical pastry chef

In my world no, butter shouldn't be replaced with dairy free margarine. I instead when my egg allergic, dairy allergic, vegan and vegetarian friends are over make other cakes instead. I have a chocolate "cake" that they love and a sponge cake from WWII that has no eggs and uses carbonated water that I can use as muffins. -
I dont use the french words for bread. In Sweden loafs are most often long, so that is what I am doing and it is easier to cut slices of it.
-
The bread is as golden as Anna N picture but my bloody mobile wont do it and the SLR wont charge anymore and the system camera ( actually both of them ) is stuck in the bedroom where the child is sleeping and when she wakes up one or both loafs will be gone. Anyway, this is a white bread, made with starter dough and main. You start a very loose dough the night before and the next day you ad milk and more flour. The flour this time was plain wheat and semolina.

I come from a country where coffee is such a important part of our life's that social events, works and life in normal cant function without it. I cant have coffee, my body thinks it is mold and goes weird. So I drink tea. We drink a lot of PG tips here, because it is my husband favorite tea. He however comes from a land of tea drinker and has embraced the Swedish coffee drinking to the point he is becoming a bit too Swedishfied. I do love other teas then just PG Tips but I dont have the money for such things.

We do have our weird stuff to in Sweden, the area I come from skillet fry potatoes and add up 100 ml of our version of golden syrup. Yeap toffee potatoes with meat, yuck.

I haven't understood it either, apparently you add the marshmallows to get the kids to eat. Is the food so horrible that you have to bribe them with candy?

The soda pop cake was lovely, sadly we ate it , it was just a wee one before I remember that I should have taken a picture. It was moist, soft and lovely, it was everything I ask of from a cake and with coke it tasted lovely. I am now pondering ginger ale or fanta. -
I just got home 9 pkg x 2 kilo wheat flour, it is plain flour. Why this much? Simple they had a deal at the store 3 pkg for the price of 2 and for me that is a great saving and I was also out of flour. The only odd thing I got home was for my brother a bag of Licorice flavoured potato crisp/chips.

Made two lunch boxes for my husband, I am not sure he loves my love letters in srichacha as much as he loves the sauce. This is my lunch today, it might look like a lot, but it is dwarf potatoes ( made with small new potatoes ), baby plum tomatoes fresh onion salad ( know to me as the Transylvanians go to salad) , 46 grams of ground beef ( left over from freezing ground beef today), Ebba peas and 1 tablespoon sourcream mixed with roasted garlic. Hubby and kid had smoked boiling sausages, I use a brand and type that is name protected so there is a lot of real meat, peas and dwarf potatoes. The dwarf potato recipe is old, I can trace it back 100 years, small potatoes fried in lard or clarified butter , it actually calls for melted and filtered butter.

I dont have many cook books, only 340. My father has about 700, I envy him. I do as he did when I was little, read cook books for my daughter before bedtime. Her favorite at the moment is 101 ways with potatoes.

You see why we never made the turkey! We Swede loves our food salty, even our candy too, it seamed way to sweet for us.
-
This is what the recipes says, make an orange stuffed turkey ( store bought will save time) and when the turkey is rested , brush it with orange juice and cover with small marshmallows and grill in the oven until golden. The cheerful marshmallows and cranberry salad is 1 cup small marshmallow cut in half, 1 cup cranberries, 1 cup toasted almond slivers and 1 tablespoon of finely chopped celery and then ½ cup sour cream and ½ cup mayo, mix and season with salt and pepper.

I win on most boring breakfast. 2 slices of bread most likely with cheese, 100 ml of vanilla lactose free yogurt + meds and two cups of tea. This what I have over and over again and it due to my meds, they wont work unless I do this. Thank God I have aged cheese, I am now enjoying a 30 month priest cheese and a 20 month Manson cheese.

And here I can only get boiled eggs with breakfast if there is any eggs.

I love words puns and food so this song is just perfect.

I have a soda pop cake in the oven, making a small tester cake for a friend. -
Since I cant eat 95% of the crisp/chips out there and hardly any candy , my weak spot is cherry or baby plum tomatoes, in season dipped in salt and pepper... Yeah, I can go through a lot of them. And cheese roulette, that it hard to stop, just one more piece and then it hurts... argh...

You dont need to use Kalix roe, any hard roe like salmon or lumpfish will do. I used to eat more back in the day before it got expensive, it was just something we got when we visited family members. The waffle is just one heart of a waffle, it a neutral crisp waffle, not sweet nor savory , just perfect.

I just pack my kids backpack right for the future, give her the tools to make sane choices when it comes to everything including food. She did one today, an apple over a piece of chocolate.

Yes it is the same potatoes , I just use a 1970 recipe called Crashed Potatoes, we got it with a turkey recipe from Grand Auntie Violet ( American relative). We never did the cheerful marshmallow and cranberry salad , nor the marshmallow coated turkey, but the potatoes was something that sounded nice and we done them since then.

This is what yesterdays dinner looked like. My husband tried the camera on his new phone. Today we had crashed potatoes, oxmeat burgers, home made burger bread and veggies. Dear daughter, had peas , burger and potatoes and lots of herb dressing and a bit of chipotle mayo. She was rather cute when she added peas to her water and called it beer.

Smoked salmon mousse waffles with a little bit of kalix roe... *drool* Not Mediterranean but oh so yummy I know father´s Italian friend use grav lax in a roll thing, it not smoked but my father says it yummy. A thin bread , like pizza base but thinner, baked. Spread with cream cheese and pesto and then thin slices of grav lax, rolled up, tightly wrapped in cling film or a town for 2 hours and then cut into slices.

Digging, I am not going to go a slugging match with you. Fruits are bad in mass amount but so is everything. *sigh* Yes, cereal do contain healthy stuff, BUT many sugared cereal is fortified and it was those you use to compare to fruit. My kid eat oatmeal or rolled rye, gets all the goodies of the grain but none of the sugar. And to you rest, easiest way to get a kid to eat, let it run around and play before dinner time.
