  3. I was terrified of the Swedish chef as kid, since I had problem with my hearing I couldn't understand him and it scared me. It wasnt until I was older I realized he doesn't say anything Swedish... I try to keep a clean kitchen. I will admit to chop everything on the same board when I making stews, it is going to cook for 2 - 3 hours so it shouldn't be a problem and some time the meat is going in raw anyway. And admit licking spoons, but I know I shouldnt due to the chance of making my self ill. I dont always cook so I can eat and I need to remember to not taste the food until I am sure I can have it. Dont cook naked at all, reason well fried or boiled nipples are not on the menu ...
  4. In Sweden the tiny cages are gone, they have bit bigger space but MOST people prefer free range eggs, indoor or outdoor and that came about when people bojcot the factory eggs.
  5. Here is the sponge of my bread, a little bit too big holes for my liking but I only have my self to blame, I didnt knead it enough.

    Fermented beverages

Same here the elderflower cordial isnt fermented, it is made into syrup and you add water to it when you want a drink. It is even added to wine sometimes.
  7. Dinner was ketchup free, chicken sloppy joes. I dont like most recipes of sloppy joes I gotten due to the mass amount of ketchup. But this made from my head and used my tasted buds, turned into a Mexican feel with tinned tomatoes and some chipolte . Little one had pasta to hers and ignore the fact there was no peas today! The bread is home made semolina sourdough bread.
  8. A sourdough semolina bread and some rolls.
  9. Yes but the problem is, I should not eat chocolate and this is me being naughty.... I cant do cake testing I be in pain for a few days.
  10. I use low fat and add a bit of full fat yogurt so far that have worked.
  11. * rips of her apron and runs screaming through the forum* Yes I am, I am even more confused now.,
  12. Similar to a recipe I have. Hrm, now I dont know which to make.
  13. My husband is Scottish and he loves the Hakushu Whisky 12 year and also Mackmyra a Swedish whisky. When it comes to Scottish Whisky, he tends to like Jura, Arbeg and Caol Ila. I on the other hand, I like babysleeper and my husband just shakes his head. I love the taste of whisky but my tummy hates it in raw form but it works with milk. Oh and he loves Irish Whiskey too, Bushmills and Tullamore.
  14. Mjx: I never gotten the cloud cake dense, it always been like more lite baked mousse.
  15. Well in Sweden most Brownies recipes are hard crust and chocolate in it. Here is the kladdkaka recipe I use the most. Kladdkaka 100 gram butter 2 eggs 300 ml sugar 4 tablespoon of unsweetened cocoa powder. 150 ml flour ½ tablespoon vanilla 1 tablespoon liquid, water, booze, coffee or juice 1 pinch salt Heat the oven up to 150C. Find a round pie tin , 20-24 cm wide., Melt butter, add salt och cocoa, whisk smooth, leave. In a separate bowl whisk egg, sugar and vanilla fluffy, but not pale. Stir in flour and the the cocoa/butter . Stir in the liquid and pour the batter into the pie tin and bake in the middle of the oven for 28 minutes. Leave to cool for 1 hour, then serve pie slices with ice cream. But for a better taste leave it in the fridge 12-24 hours and then pipe roses of whipped cream and serve with fruit. Every one will get a harder crust and a gooie center this way. proper kladdkaka isnt served in squares.
  16. Well made properly the kladdkaka doesnt have a crisp topping which a brownie has and a brownie has chocolate in it and kladdkaka has cocoa powder, so there is difference and also in texture. I dont like Devils food cake, I never found it yummy even though every one says. I always find it too dense for my liking. I think I be going with the cloud cake.
  17. Yes Nigella cloud cake, is the one. I always do kladdkaka since it is my friends favourite and I make a darn good one. I still not sure, what to bake. Normally we only have whipped cream and strawberries, I want more.
  18. It midsummer eve on Friday and I thought I would jazz up the traditional Strawberry and cream dessert with adding a chocolate cake to it but I cant figure out which one I should make. French chocolate cake. http://recipes-cake.net/recipe/french-chocolate-cake/ Chocolate cloud cake: http://www.nigella.com/recipes/view/chocolate-cloud-c Or should I just make brownies or kladdkaka? Help!
  19. My daughter thought that I was annoying, taking pictures of the food when it should be in her belly asap. We had Russian pan , god knows how Russian it really is, but I have recipe of it dating back to 1921 , then it was made of chopped beef. You layer the food up like a dart board, bulls eye is Smetana or sour cream, then chopped gurkin , pickled beetroot , ground beef fried crispy with onions and lots of black pepper and then boiled and butter fried potatoes. It is really yummy and yes my husband and daughter had peas instead of gurkin. A day with out peas is a sad day for my daughter, she could eat them for breakfast if I let her.
  20. We used to do elderflower wine before I got badly intolerant to lemons. Some years it would be slime green due to the flowers.
  21. We hade burgers, elbow macaronis and ketchup. I just needed to feed a very cranky kid fast.
  22. I always buy the best meat I can afford when it is on sale or offers. The freezer is my friend, but I dont over buy so the meat goes bad nor can I, it holds about 1½ month worth of food + peas. And I menu plan, so I know what we need. Oh next Sunday is menu planning day, I will ask you lot for help.
  23. Oh I love potstickers. We ended up with burger burritos, fried two burgers, sliced them added beans and tomatoes and spices, cooked and rolled up in a tortilla.
  24. Pulled pork, baked potatoes, tomato salad and my daughters beloved peas., We had srichacha and chipotle mayo to this. Not fancy but yummy. We are not a rich family nor even middle class, we are poor and I think I do well with what I can find that suit my budget. The pulled pork was thick ribs, 3 of these and we had dinner that was enough for us all and the best part, the meat cost us 18 SEK, thats 1.8 Euro or 2.55 USD and it was still Swedish, high grade, fresh butchered in the store . The closes I can get to good meat without buying eco.
  25. Vegan chocolate balls 50 ml of chopped peanuts 200 ml of almond flour 150 gram of stone fre dates 1 tablespoon of golden treacle or agave ½ teaspoon cinamon 1 teaspoon of vanilla Dark dairy free chocolate for dipping Mix everything in a mixer /blender until you get a sticky mess. Roll into balls, its say 15, but that might be tiny. If the dough is to sticky add more almond flour. Refridgate and when cold tip into tempered dark chocolate and let it set. You can also add coarsly chopped nuts to it and makes "cookies" and dip in chocolat, but that is fiddley and I who is lazy makes into a cake and spreads the chocolate on top.
