I forget to whom to give the credit but I convection bake my sweet potatoes three hours at 275F in the CSO. In fact I was about to put one on to cook just now -- howsoever I decided I didn't want to wait that long for dinner.

Couscous with leftover restaurant bastille. CSO did yeoman service. Out of the corner of my eye I saw what I thought was a cockroach on my cutting board. Turns out it was a stinkbug. Not all that much more welcome in my kitchen.

If I didn't worry about getting juices all over me and the kitchen I might find it more calming. The mushrooms I wanted were little brown ones, with the gills still closed or barely open. I would have been happy enough with little white. But what amazon sent were saucer sized adult Portobello.

Bell & Evans chickens were on sale on amazon. When will I ever learn? There are few culinary tasks I despise more than breaking down a chicken. Besides, amazon could not supply the mushrooms I needed for my chicken cacciatore. Anyhow, two dishwasher loads later dinner was a breast quarter steam baked in the CSO. Mashed potato and peas.

I have not tested but I am pretty sure the unit never shuts off below 214F. If doing a 72 hr cook I'd keep the sensor plugged in so the battery did not run out. However the Paragon would not be my tool of choice for a 72 hr cook. I do know from experience that at 375F the unit will shut off if left unattended long enough. Press and hold the + and - buttons together for three seconds to toggle the display to Celsius. Edit: sorry, I misread, I see you already figured this out.

Forgot to mention, I had my first Cosmic Crisp two nights ago -- $3.49 a pound as I recall. Shape reminded me of Red Delicious, never a good sign. Skin was thick. Taste and texture reminiscent of raw potato. But it was not horrible. To my mind the worst apple sin is mealiness and my Cosmic Crisp was certainly not mealy. My favorite apple variety remains Lady Alice.

This was supposed to have been chicken cacciatore. It isn't. Amazon sent the wrong mushrooms. I had never cooked Portobello mushrooms before. Here with deckle portion of dry aged ribeye.

Anyone with a gas chromatograph? There probably is celery in there someplace. At what level would celery have to listed by name as an ingredient? Besides peanuts my primary use for Lowry's is on corn on the cob.

To look at it a different way, if the plate is 135F you should be able to put your finger on it. (Please don't try that experiment.)
