    Dinner 2020

Maccheroni quadrifoglio with walnut* sauce. Joy of Pasta (p185). Quadrifoglio is notoriously difficult to shape and some pieces split. Taste was not affected. Quadrifoglio tossed with butter and then tossed in a sauce of walnuts, cream, thyme, cinnamon, and parmesan. *in this case, nuts.com red walnuts. My doctor tells me to eat nuts.

    I laugh, but I don't laugh.
  3. Sadly, as far as I can remember, I've not been thrilled with any of the varieties from the Xoxoc project.

    Dinner 2020

In these days of privation and despair I cannot bring myself to do much cooking. Even with the best of good intent. Tonight's dinner was no exception. In my refrigerator are many bags of pasteurized sous vide protein that can be ready at a moment's notice. Here is a CSO chicken leg quarter, served with Rancho Gordo moro beans, recooked three times over. (And I must say they needed it to get them half way tender.) The untraditional pairing is not with cauliflower but with Japanese sweet potato. The whole is greater than the sum of its parts.

I recommend her book. Not so much that recipe.

Thank you. Broccolini is perhaps my favorite vegetable. But where are the potatoes?

    Dinner 2020

Hsiao-Ching Chou wok-fried egg. Not much of a fancy repast but I am paralyzed with virus fear. Got the job done.
  8. My son took me to the doctor today and on the way home we picked up 8 liters of wine and a bottle of rum to keep my tummy warm. Meanwhile the price of laundry detergent on amazon has jumped way up. I've been reusing my t-shirts. Sorry if that is too much information. (I draw the line at underwear.) I have six bags of flour on their way from KAF. Bread for my work lunches. Too bad work is canceled.

Fifty years ago I'd read all the published works of Freud. Somehow I missed the part on cauliflower. Must have been in Beyond the Pleasure Principle.

Oops. I thought they were mashed potatoes when I gave my "like".

    Dinner 2020

Tomato, mushroom pizza... Have no fear. The basil was from my dining room. No leftovers.
  12. I just placed an order for six bags of King Arthur flour. Noted they were sold out of dried milk powder.
  13. I confess I went food shopping today. Shoprite was a zoo. Most shelves looked normal. It was interesting what customers were stockpiling. Most had paper goods. One cart was overfull of canned beans, cooking oil, bottled water, and Diamond Crystal salt. Myself, I stocked up on limes and peanuts. I couldn't have carried it home even had it been in stock; however they were totally out of Arm & Hammer laundry detergent. Any flavor. The other detergent brands were pretty sparse.
  14. I just use ice cube trays.
  15. When I am vacuum sealing something with water I freeze the water first.
  16. I went with Japanese Cookbook for Beginners.
  17. Now $1.99 -- ripoff.
  18. I am afraid. Not just of the virus but of running out of limes and dying a horrible death of scurvy. I am not afraid of running out of Rancho Gordo beans. More Moro beans tonight for dinner.
  19. Folks have suggested I try higher protein flour. Tonight's loaves were made with KAF Organic Bread Flour 12.7 percent protein... All other variables as close to last week's bread as possible. Shape was a little wonky. Crumb looks satisfactory. I'm about to go assay the taste.
  20. I've a cast iron wok but I don't use it for oatmeal.
  21. I came upon a Fuchsia Dunlop recipe for Sweet Corn Kernels Jade Rice with Green Peppers. Mercifully she did not include a photograph.
  22. No food shortages here, except possibly King Arthur Flour. Ranch Gordo Moro beans were last night's dinner but that made no dent in the supply. I could stuff a bean bag to barricade my door from zombies.

    Dinner 2020

Dinner was supposed to have been @Wolfert's chicken with caramelized quinces and toasted walnuts. It didn't happen. After an hour of searching for cubeb in my spice collection, and agonizing whether voatsiperifery or grains of paradise would be a better match, I gave up and settled for a CSO chicken thigh, peas, and mashed potato. Got the job done.
