  3. Do you have one? I've had no problems with either KitchenAid. And I don't treat them nicely.
  4. One was sitting on the floor of the freezer. The other was sitting on top of the first. Unfortunately I do not remember which was which. I plan to repeat the experiment.
  5. Something tonight I had never seen before... For the ice that goes in my beverages (as opposed to the ice that goes in my shakers) I use miniature Japanese plastic trays with lids. The same trays I've been using for about ten years. As usual, the other night I filled two trays with the local Millstone River tap water -- quite potable to my taste but nothing special. Tonight when I went to make my Mississippi* punch, one tray was almost crystal clear. The other tray was solid white. The trays had been in my refrigerator freezer, not the blast freezer. The difference in the ice was striking. Thoughts? And, yes, I am still relatively sober. *longer than the Millstone but not as pretty.
  6. I feel that if you've paid for a commercial mixer you shouldn't have to baby it. At speed 2 the hook does nothing. Even my almost 35 year old KitchenAid has never had a gear problem. (I think we've had this conversation before.)
  7. Yes. I even returned one mixer because the bowl could not be adjusted properly.

    Lidia Bastianich's tonno in salasa mimosa. A salt, acid, bitter garlic bomb which is not necessarily a bad thing. The rarest rawest tuna that has passed my lips.

  13. Most recent bread prior to APO. First loaf from the APO. Not quite a kilogram. After a week still good.
  14. I looked on line and one site suggested Pink Lady or Granny Smith. I am fond of both but Pink Lady sounded interesting. Shoprite had a Pink Lady sign. The Pink Lady bin was empty.
  15. On my Polyscience I use a 3 second seal.
  16. When using the rear element fan speed is locked on high. I would try using the bottom element, no fan, no steam.
  17. Rereading Modernist bread tonight, they suggest doubling the 1 kg recipe if using an 8 quart KitchenAid (as I was) in order to get the spiral hook to grab. Now that I have an Ankarsrum it is rather a moot point.

  19. I'm thinking to dehydrate some apples in the APO. What varieties are best for dehydration?
  20. I put a hold on Flavor some while ago but there are still five people ahead of me. Not sure how many copies we are getting.

    APO 8 hour short ribs. Apotheosis of beef. My only wish is that eventually (though not too soon) I may give such pleasure to the mountain lion or the worm. Won't share my chocolate ice cream though.
  22. Not sure it will help, however I order Le Creuset pieces from amazon sites in Europe that are not available to me domestically.
  23. Herrick's French Soups book was only $1.99 so I bought that too.
