  1. @Kim Shook interesting . you've seen what try-tip looks like on-line : https://www.beefitswhatsfordinner.com/cuts/cut/2443/tri-tip-roast Id love to see what's in the packages out of the package for fun. any meat , of any kind can be cooked SV , initially or totally. remembering that the Bath Temp ==> ' doneness ' ie rare , med etc works for all meat(s) time in the bath ==> tenderness. with in reason . there are those pesky '' mealy ' issues. pick your temp for doneness and then try to guess the tenderness time. a massive feature of SV : once you get into ' hours ' in the bath w properly handled meat an hour or so more , won't take any differenc unlike that extra hour on a RedHotBBQ. enjoy ! try one, keep track , and then do the second a bit differently based on your first result. etc. what fun !

    @JoNorvelleWalker '' Try Bell's turkey gravy. '' I have . its relatively new, to me. its quite interesting it reminded me of Turkey fat as if some of the turkey fat flavor was added but have very little fat in it. interesting stuff.

    Shepherd's Pie : this was all Commercially prepared ingredients : in the past I CSO'd a slab of ground turkey , from TJ's as it was approaching the ' Eat Me Soon ' date , as i had to get it done so , I took this idea a little further : ShadyBrookFarm ground turkey 83 %. said by the company to be dark meat , vs the 93 % which is mostly white meat. the packages are 22 or 24 oz , so thicker. above , flipped out of the plastic container , and Penzey's Chicago Steak Seasoning on the top 15 min. CSO , 350 F steam. added a jar of commercial Turkey Gravy. this jar was Heinz. into the jar I added 1/2 T Bell's seasoning ( Vac'd and Fz pre thanksgiving ) a few drops of liquid smoke ( Wright's ) and a few drops of RB40. shook the jar vigorously to distribute . no pan needed added commercial mashed potatoes , right out of the package. there are two brands ( at least ) in my area . this one , and the other one . Ha Ha. ' Family size ' : back to the CSO 350F steam 30 minutes moved it up in the CSO for Steam Broil. the potatoes are quite stiff right out the the refrigerator , so Ill ' cut them up ' a bit more next time , right in the container . I was surprised how tasty this was. remember , Im looking for ' easy ' next time Ill try the Mushroom gravy ( Jar'd ) and brown the top more in the CSO the temp of the meat was 160 f when i took it out pre browning . Ill try for 140 - 145 F next time. as has been said here , from time to time " Ill just get my coat ....'

  5. picked up a few new items for me : the orange chicken bowl is decent. there were two Chinese take out places near me. one had very good Orange Chicken , but burnt down ( no injuries ) several years ago the other had a decent Hunan Crispy Chicken , and Singapore Noodles. the MagnifiSauce is very close if not identical to McD special Sauce. Tod Wilbur had the Rx in one of his many and interesting books he now sells the stuff : https://topsecretrecipes.com/spices the honey from New Zealand is nice. it was about $ 3.89 or so. next to it in a similar bottle was another honey form NewZealand , it was $ 13. 99 I passed on that one.

    @dcarch Excellent baked bacon is fantastic, both Cold Oven Start and hot oven start how do you concentrate your tomatoes ?     same, but i use two layers of parchment paper in between helps clean-up if you get excellent browning in the layers

Tj's has has some dehydrated Romas no oil , in pacts dehydrate well for a risotto or orzo dish deliciously ignore the initial wetness cut in 1/2 gently clear out the seeds slice , to be determined width dry in a dehydrator assuming its not 75 % humidity your way B ) send to Modernist Cuisine Seattle , collect there are no garden tomatoes in Seattle as for 50 % of their solution back , pre- paid.
  11. Ive been thinking about the PJ // NCi . the patent must have expired at some point. recently , perhaps or some time ago. 'Ninja-Brand ' I think is the fist p patent there might be others at some point or not. interesting to see what Brevelle , others think about this CubbyHole. the CSO is still going strong here , and has two grandchildren although it was Xx'ds it brought on the next generation. and I don't need WiFi or bluetooth to Create.

P.S. : I won't be ' spinning ' maybe ' processing ' or ' creating ' I plan to start w canned Pears. they end up riper than peaches in the can as pears ripen off the tree Pears ( no added sugar , maybe pear juice ) a little G.Marnier or TiaMaria , or Creme-d-menthe etc looking forward to it. if you watch a few YouTube vids ( if you can stand the 'ads' which are insipid ) its noisy. and listening to the pitch of the motor very high pitched , I doubt the motor will last ' forever ' I hoping one Creation a day , and 1/2 of that back in the freezer for further Creation the next day Kudos to @mgaretz for paving the way. abd BB&B for the $ 40 ( + free shipping ) all pass the saving along to TJ's Table Wine dept. looking forward to this.

  22. cheers @Franci consider a call to HomeDepot w the dimensions . sometimes you can get a very helpful person. next is to look around for higher end store and call them all of this depends on the stores you have around you. Im sure you've thought this and done most of it already the HomeDepot website has a lot of information on it that might help you narrow down the brand choice.
  23. @Yiannos interesting idea. my guess is that the Ci 's weakness might be its motor in relation to durability etc. it might be fine for ' household ' use vs restaurant , I hope so . looking forward to the ' canned fruit parfait '
  24. @Anna N your points are well taken. especially the trust in handling very expensive ingredients , and understanding how to cook them perfectly. I think , in a neutral way , that Veg cooking is very much about presentation and textures. the Beet flavor being a constant one.
