@heidih fine tip . thank you . I ued to frequent ChinaTown , the local and later , a large Chinese supermarket Sundays AM . they had taking then ! but never looked into Chinese celery. Ill make a note . thanks

I avoid peeling celery pre-onset : i never buy it . Id get the tops if they were available JP proba bly uses the peeler as celery is straight and relatively smooth.

id bet JP has an appropriate Thumb callus. BTW the knife for doing this need not be razor sharp.

re: JP & Stem peeling : he does seem to take off a little more w his technique . Ill bet its much quicker and easier once you get the technique down pat. using a peeler on a surface that's not completely smooth is a challenge . the knife // thumb less so . im sure during JP's career speed mattered .

@!ElsieD ive just treated them the same as the bigger broccoli stems as they are thinner , they may not need peeling and cook based on their thinness they are delicious with still som4 body to them/

my iC is resting comfortably however , I have some ideas on how to move this along. I have a place for it , and then can move it easily enough , to the Work Area . I wonder if watermelon , ripe ripened to perfection locally , ie your yard . might be worth Vac'ing , as a few slabs the Fz for later . id bet Watermelon sherbert , even ice cream once the iC folks here get to working with it . it has Water , more than cantaloupe

late lunch similar to breakfast added scallions from the window sill as they grow , they become much sharper in flavor worked quite well here , as these beans are on the sweet side.

arbitrary food waste is unconscionable Big Food does benefit from it you then re-buy more useful information thus wont come from Big Food expect BF to resist constructive and helpful changes . changing labels adds to their costs and reduced sales.
