  3. @gfweb if your meat is tough , just SV it longer at the low temp if you can stand it for 3 or so days, do the refrigerator RB40 cure. then SV it based on its toughness , at the low temp. this is of course for meat w flavor vs tough meat that has ;less flavor : ie Round etc its fun and tasty knowing your meat .

    @Anna N the badness scale , for the use of ice cream relates only to the temp of the ice cream @ the time of consumption : rock hard : pretty bad etc.

  19. @curls now that's a serious selection of aged Meat ! I would have found the price interesting , but for no other reason. those burgers certainly have a selection of toppings . I probably would have starved to death as I would not have had enough time to decide what my selection was . tasty any way Id bet.

    @dcarch exceptionally fine SV set up. wha were you Sv'ding in the second pic ? I see a divider what's its role ? and it seem your water is a bit dark and Ive never thought os SV ribs sound interesting and you finish them ..... chers
