    The Big Smoke

I'd say around 40-50, that's about 1/2 lb uncooked meat per person. I'm assuming you're also serving "filler", ie coleslaw, potato salad, chips etc. Buy some hot dogs/burgers just in case. You can always frezze them if you don't use them.

    Butchering a Tuna

Steingarten wrote about tuna fishing in one of his books. The fisherman on the boat with him didn't want the toro because it was too fatty so he took it all.
  8. Welcome pingarina Here's my recipe. I started out using the Bayless recipe but now I just add stuff until there's a good sweet/sour/hot balance. I've never had a sangrita without tomato, but it sounds intriguing. The Bon Appetit Mexico issue had a good idea: they scooped the pulp out of lime halves, froze them, and used them as cups for the tequila and sangrita. I tried it and my guests were very impressed. Hope you'll post in the Mexico forum; their are several good Mexican cooks here.
  9. Van Ball's is the bomb. I used to go to the same church as them. Great rib steaks.
  10. I do I (in Chicago) usually shop at a market in Lincolnwood which caters to an Orthodox Jewish/Eastern European/Asian/Latino/East Asian/Korean population. I also have a good fruit market (Eastern European/West Indian/Mexican) two blocks from my house. All of my meat is bought from a German butcher (Bornhoffens). My fish I get at the Fishguy Market. Every couple of months I head out to Mitsuwa in Arlington Heights to stock up on Japanese/Asian staples. In spring/summer/fall I by my produce from the Evanston Farmer's Market (mostly from Nicholls). Some people think I spend too much time shopping for food.
  11. Talking with a friend over the weekend we bemoaned the fact that few Americans sit at the table together for dinner. Do you usually sit at the dining room/kitchen table to eat? We do almost every night, and now that it is getting nice we usually sit outside. Most of our non-egullet friends seem to just eat whenever/wherever - often in front of the TV

    white zinfandel

I just bought a bottle ($8.99). will try it tonight with some grilled chicken.
  13. If your fish is really fresh I wouldn't do a whole lot to it. I'm assuming these are whole. Cut slits in the skin on both sides. Add salt, pepper, and olive oil. Grill, turning only once. Sometimes I stuff the fish cavity with herbs - parsley, chives, thyme, green garlic, lemon zest, oregano. Squeeze a little lemon on it after its cooked. Make sure to eat the meat in the head of the fish, it's the tastiest part.

    white zinfandel

Everyone loves to pick on Roses made from zinfandel. Are they all bad? Very good rose wines are made from Grenache and other red grapes (which ones?), why not Zinfadel? By the way, I've been drinking a very good salmon-colored rose from Italy, Cavalchina Bardolina Chiaretto.

    Sugar

Here's an easier answer - don't add sugar to your margarita. 1 part lime juice 1 part triple sec/cointeau 2 parts tequila shake and serve on rocks in glass with a salted rim. the sweetening comes from the triple sec
  16. My daughter had a sushi dress two years ago and my son has sushi pajamas. Some of our relatives in West Michigan were quite confused.

    whole pigs

Dean can say this since he's the Master Smoker in the Midwest.... Maybe we could do a Pig Roast in the fall...that would be awesome... Umh, "we" are: Come to North Cackalacky If we can get people from Texas, Missouri, Toronto, Philly, NY, NJ, Mass. and Chicago, too, we can get the rest of you 2nd City folks! Isn't more than one pig per season permissable ? Varmint, I'm working on my wife to go. I just saw that AirTran ( ) has $139 flights to Raleigh/Durham. What can I do to convince her?

Yes, but only a tourist would do this.
  23. I saw it at the Field Museum in Chicago. It was a great exhibition, and I don't even like chocolate.

Reasons to hate Bobby Flay: 1) Gas Grill = whenever Jack asked him why he used a gas grill, Bobby's only reponse was "It's faster" 2) He perpetuates on his show the myth that searing meat seals in the juices. 3) Have you ever seen anyone use vinagrette for so many things? I could go on but I have better things to do.
  25. About 12'x8' in my 90 year old home. I like it small, because I hate having people (except for other egullet people) in there getting in my way.
