Yes, that's it. Next time I have my teeth cleaned is revenge time. A chopped liver sandwich w/ raw onions before the appointment. Maybe a char dog from wiener's circle too.

Everyone here in chicago calls these rolly pollys, but I call them a potato bug too. They're supposedly a relative of crabs and lobsters. Maybe edible?

2nd on Mannies. What a great place, and a Chicago institution. I remember eating there once and I was surrounded by: a gang of bikers in their leathers; a table of 4 Hispanic men; a family of African Americans, and a big table of people from some unknown Eastern European country. For take-out delis, I love Kaufmans in Skokie and Romanian Sausage on N. Clark. There's also a good deli on Clark (2500 N?) right across the street from my dentist. It sucks because I always want to eat there but my teeth hurt too much. The best deli in the Heartland, however, is Zingerman's in Ann Arbor MI.

I forgot to metion that she used a lot of salt, and only grilled the meat for about 20 seconds per side. The fire, made from logs, was very hot.

A friend of mine in Oaxaca made her carne asada this way (be prepared to be underwhelmed), and it was the best carne asada I've ever had. Skirt Steak pounded until you can see through it salt Grill the steak and squeeze some lime on at the end. Serve with tortillas, salsa, and grilled onions.

Roasted Asparagus and Mushroom Salad Serves 4 as Salad. Try to buy smoked paprika for this dish, it really makes a difference. I use the La Chinata mild brand (hot would be good too). 1 lb asparagus 1 lb cremini mushrooms 5 scallions, cut in half lengthwise 1 clove garlic, minced olive oil red wine or sherry vinegar 1 tsp smoked spanish paprika 1 tsp fresh thyme Preheat the oven to 425 Peel the ends of the asparagus and cut the mushrooms in half. Toss the asparagus, mushrooms, and scallions with 1 Tbs. olive oil and some salt and pepper. Roast Veggies for 10 minutes and let cool. Slice the asparagus into 1 inch pieces. Mix the garlic, paprika, vinegar, 2 Tbs. of olive oil, and thyme. Add the vegetables and let marinate and room temperature at least an hour. Keywords: Easy, Salad, Vegetables ( RG530 )

The people at the Blues festival talk so much you can't hear the music. Also, they stopped bringing in the Chicago R&B greats (Major Lance, Tyrone Davis, Little Milton, Otis Clay etc) to focus on what suburban WXRT listeners think "blues" is. The Abbey Pub is a great place. I'd say an 11:30 show would probably start at 12:15-12:30? Have a great weekend. -
I bought a bottle of the Cruzan Estate Diamond ($19) and it was an eye-opener. I chose this one of Ed's recommendations because I had toured the Cruzan distellery while on spring break vacation in St. Croix. This has to be one of the best values in spirits going. I would compare the quality to a $40 cognac or $30 Spanish brandy. Can't wait to try some more. Thnaks Ed.

Yes, listen to the Klink man. I smoked a turkey a few weeks ago. I cut it in to pieces (breast, thigh, leg) so it was easier to deal with and brined it 24 hours. It took about 3 to 3.5 hours at an average temp of 200 F. This was a 14 lb. turkey. Maggie, Lady T, and Aurora were eating it faster than I could cut it, Did you put all of the different types of pieces on at the same time? What kind of beer did you drink? I put the thighs on 30 minutes before the breasts (another good reason to cut the turkey up - I also used the back and wings to make stock for the mole verde). I was drinking Negra Modelos and Pisco Sours and Sangria and Alsatian White wine

I once read an article somewhere where they had Italian chefs use top grade Japanese rice and Japanese chefs used arborio. Both sides agreed that the others rice was great. Just don't use long grain in paella.

The original paella has snails, rabbit, and green beans. It also must be cooked outdoors over an open fire by a man. I'm a fan of putting whatever you want into it though. In Catalonia they don't add saffron (they should). The rice Jaymes refered to is highly recommended, but arborio rice will do in a pinch. You could probably use the Japanese style Cal-Rose rice too, but the rice has to be short grained - not long grain. The fact that so many of you use chicken thighs shows how smart people here are. I also like using cubes of pork shoulder. If you want to make a fancy paella put a cut up lobster in there. Also, one other key thing is you must fry the rice before adding the liquid, like a risotto. All the liquid should be added at once though, and stirred very little.
