    I overdid a bit yesterday and paid for it all night. Advil just wouldn't kick in or something. They are very dark meat and very lean. The ones pictured were plucked which makes them look a bit lighter but under that skin is very dark. And yes, so lean that they need the bacon wrap if you grill or roast them in this way. Plucking takes longer, but I like the way the skin crisps up. Our hunter friend refuses to pluck so you probably won't see any like that next week lol.

    @Kim ShookI hope you're feeling better!!!! I'm getting a bit better every day. Still very swollen and sore but I can hobble more freely. Going to be a while before I can outrun someone I think lol. Thank goodness my cleaning angel was able to come today. I can do most things but getting in the shower and cleaning it seems very daunting at the moment. Anyway. Food: Ribs, garden tomatoes and shishitos, beans and fries Hot wings with what I thought was the sauce I always use. Turns out it's not and it wasn't my favorite. Ronnie went hunting again on Tuesday so more doves. I was making some sauce for the freezer so had some pasta and salad on the side. Made for a nice leisurely cooking time. Lemon posset for dessert
  11. I ordered sandwiches etc. from Goldbelly (shipped from Sal, Kris and Charlie's Deli in Astoria, NY) last week. Supposed to have been here Friday. Got here yesterday. OH did it smell bad. I feel sorry for the UPS person that had to drive around with it. Sandwich was 87 degrees! The cheese was nice and melty 🙄

  13. I'll continue the rant 😬. We moved to this old farm house about 20 years ago. Brought our old washer and dryer with us. They ended up shooting craps at about the same time. I was sooooooo in love with those front load washers and dryers. So new and shiny and pretty. Bought both. Even pulled a chair up the first time I ran them. Watching the swishing in the washer the the drying in the dryer was mesmerizing. Fast forward a month or so. Problem after problem. Very hard to get repair people out here as most of you know. Washer spewed water down in the basement more times than I can way with no answer as to why. Electronic boards went out. Arrrgh. Not to mention the UNMENTIONED secret drain that is hidden behind the bottom panel in the washer that you're supposed to clean out. NOT ONCE in the manual did it say a thing about that. Yes. A repair person came out and finally told me about that little gem. Opened it up (total pain in the ass) to find, of course, pet hair, coins...and bullets. Sigh (before you start judging I told Ronnie years ago I was NOT reaching my hand into his days worn overalls/jeans ever again and if it ruined a washer then it's on him and I dare any of you to reach into his pockets. (((shudder))) I now own a Speed Queen washer and dryer. So far, really good. NO electronic board. Turn dials only. Knock on wood they are really great.

    @Ann_THappy Birthday!!--that is a stunning meal. I love the way the potatoes look. @DejahHappy Anniversary!! Beautiful conserve. It will be so nice to have those jars this winter! @Kim ShookYour fried green tomatoes have me drooling. We barely have enough red tomatoes so I don't think the green ones will be picked for that this year...I will have to envy yours on the screen. And that pork butt YUM. Did you freeze it or?? @weinooI hope your hand heals quickly. That looks very painful. @gfwebUGH I'm so sorry. I hope it's not severe and goes away very soon. I got in-between Scout and a thrown frisbee a week ago. She was running full tilt and hit me square in the back of the knees. Ronnie said my head and feet changed positions. I hit the ground hard. Immediate pain in my lower leg, ankle and foot. Nothing is broken, just a reaaaaaaalllly bad sprain. It's very swollen and black and blue. AND it's the same leg that had the vasculitis. ARRRRGH. 47 just hasn't been my year. I'm ready to be 48 lol. So, a lot of hobbling around...I'm still cooking but I've neglected taking a lot of pictures because. Well, the leg. Made another batch of sauce for the freezer. So that with some Italian sausage. Fried and then pressure cooked chicken. Fried okra and tomatoes from the garden. Mashed and gravy. Dove season opened Thursday so doves stuffed with onions and jalapeños from the garden. Mac and cheese, tomatoes and spinach. We planted an apple tree like probably 17-18 years ago. It made apples for the first time!! 6 of them...well, actually 7 but a raccoon got one . So, I decided to make a little crostata. Very exciting to eat our own apples! Venison cheeseburger pizza rounds it out. Our hunter friend comes next week so I'll be over on the usual blog around Monday or Tuesday

    This is a thing of beauty. I apparently am wrong, but I've always thought that Nebraska was the same as Kansas--a big void of fresh seafood. Where did you get these wonderful scallops? I use the leaves off my cilantro plants in the garden until they dry up and die. I've not noticed a difference in taste. Ronnie found some chicken breasts for a decent price so I froze about 4 of them and left two out for meals. First up was chicken parm. Since I had sauce made, more calzones--Spinach, mushroom, Canadian bacon and pepperoni. Beef steaks on the grill. Mushrooms and broccoli needed using--broccoli cheddar sauce on the baked potatoes (potatoes still from our garden...they are keeping well). The rest of the chicken breast fried up for a big salad. Roasted a chicken in the CSO (I guess I'm hungry for chicken lately). Forgot to take a picture of the rest...scalloped potatoes were involved. A long time ago I ran across a recipe that used frozen jalapeño poppers that you insert in-between your burger patties and grill. Kind of like a Juicy Lucy. Remembered that and had Ronnie pick up some frozen TGI Fridays frozen poppers. Cooked them in the CSO for 8 mins and then when they were cooled off I put them in venison burgers then grilled OMG I forgot how easy and good they are. Last night was scallops, pasta, spinach and squash.

    Preserving tomatoes

    Again, for me, the flavor of a good tomato absolutely changes for the worse when it's chilled before cooking. Believe me, I'd love to peel a batch of tomatoes, shove them in the fridge, and then make sauce the next day, but I don't because of the flavor.
